Scalloped Corn III

Iloved this recipe but I changed all the ingredients. I used potatoes, cream of mushroom soup, no eggs, regular crackers, yellow onions and then baked it at 375 degrees for an hour. It was as good as this recipe. Just kidding. This was great as is.

Kentucky Bourbon Balls

I used Maker's Mark bourbon and then dipped the balls in Wilton Red melted candy. I wanted to make them look like they had red wax like the Maker's bottles. Although the Wilton Red is vanilla flavored, they turned out great and added a great suprise in my gift baskets. This is THE recipe to use when making bourbon balls. I also dipped some in chocolate and then dipped the top in the red candy to reflect the red wax on the Maker's bottles.

Quick and Easy Tuna Casserole

I started making this casserole in college and it has become a staple. I won't say how many years that has been but rest assured it is a lot of years, lol..... Add anything you have on hand and it will still be great.

Special Occasion Stuffed Crown Pork Roast

Great recipe. If you want to keep the crown form before adding the stuffing, you can insert a large apple in the middle. The apple will help keep the form and add delicious flavor.

Chicken Mole

Great flavor but I would lightly salt the chicken before browning. I used boneless/skinless chicken breasts and they did not absorb the flavor from the sauce as much as I would have liked. A great quick change for weekday chicken dinners.

Fiesta Chicken Enchiladas

Easy and quick to make. Great flavor. If you don't have chunky salsa you can use picante sauce and a can of drained diced tomatoes. If you dont have chopped cilantro or ground cumin, you can use a packet of taco seasoning. The great thing about this recipe is that it makes enough to feed a hungry family with ingredients you have on hand.

Salad Stuffed Shells

This is a great appetizer for the office parties when everyone is on a diet. I use reduced calorie ranch and spinach chopped with the romaine. You can use almost any colorful veggie, ie, green and red peppers, carrots, small pieces of brocolli and even red cabbage. This always gets oooohhh and ahhhs.
