Spicy Mango Salad

In my country (Jamaica) this is called pepperpot. But here's how we do it: almost ripe mangoes, salt to taste, scotch bonnet (or any other HOT pepper), vinegar (optional). We don't even chill it. As a child I used to just sit under the mango tree with my bowl of "turn" mangoes, knife, salt, and pepper. AMAZING!!!

Louisiana Shrimp Creole II

this recipe was pretty good; the family loved it. next time i make it i'll leave out the stewed tomatoes and just use tomato sauce and add my own tomatoes; that way they're a decent size. and i added 2 tsps of sugar just before i added the shrimp, and of course, a bit more cayenne :)

Mac and Cheese II

this is a good recipe. i used cheddar and mozzarella in mine. and of course i added black pepper and cayenne. i didnt need any salt cause the cheeses were salty enough. i used a little less flour so it was more creamy than thick. end result was FABULOUS. i topped it with more cheese for the final 10 - 12 mins; came out golden and cheesy and bubblt. LOVED IT!!!

Jamaican Saltfish Fritters (Stamp and Go)

I tried it today... Left out the baking powder, added scotch bonnet AND cayenne pepper (I like my food spicy). They were PERFECT. It was my first time making them too. I even added (cooked) shrimp to some of the batter...

Caribbean-Spiced Roast Chicken

I made this for sunday dinner and my fanily LOVED it. My cousin said he was craving it last night, lol. I used Jamaican White Overproof Rum, and i stuffed the chicken with garlic-mashed potatoes. I also baked it at 400 degrees instead of 350. It was FAB!!! Definitely gonna do it again :)
