Homemade Black Bean Veggie Burgers

I made these tonight - really good! Next time, I'll make more so I can freeze them instead of buying the Boco Burger style....I didn't change a thing except no roll and had a salad with it!

Brothy Shrimp and Rice Scampi

The recipe doesn't include the lemon juice listed in the ingredients.....I assume it goes in with the shrimp and garlic? Going to try it tonight and add some broccoli and carrots as well!

Peanut Butter Potato Candy

I'm not sure what happened, but this mixture didn't come close to a dough - it was very soupy although, I checked 10 x's over to be sure I followed the directions exactly. I used to make this also as a child with my grandmother and never had such a soupy mix. I thought that 1/4 cup of mashed potatoes was very little - I remember using at least one potato.

Yes, this is very good, but a bit soupy like many say but all you need to do is have a pot of brown rice and there u go! True Jambalaya the easy way!

Easy Shake and Bake Chicken

I've been making my own shake and bake chicken and pork for a few years now. This is a good recipe! For something different, you can also try curry and paprika or for an oriental flare try some wetting it with low-sodium soy then shake with whole wheat bread crumbs, ginger - out of this world!

Chicken Pot Pie I

Very bland recipe - if you steam the chicken with a little bit of water/chicken bouillon, garlic, onion, pepper, thyme, rosemary, sage, basil and fennel, you have a great start. I advise using fresh or frozen veggies to eliminate all the sodium that is in canned veggies. With that said, you have a wonderful dish that was worth the extra effort!
