Gluten-Free Granola Bars

Delicious but be sure to carefully read the ingredients on the crispy rice cereal. "Malt" refers to barley malt and that means it is NOT gluten-free. Kellogs Rice Crispies are NOT gluten free. Rice Chex are. Beware if you are very sensitive or celiac.

Versatile recipe - try limeade with tequila, pink lemonade and vodka, just don't plan on driving afterwards. It's delicious but packs a punch!

Ultimo's No-Bake Blueberry Squares

Totally easy. Totally yummy. So easy to adapt to your diet/taste. I used 12 ounces of lowfat cream cheese, maybe 1/3 cup sugar, both vanilla and lemon extract, a couple Tblsp lemon juice and fat free cool whip. I'd give it 10 stars if I could.

Mushroom Stuffed Zucchini

Great recipe - very easy to customize to your own tastes (I added garlic and vidalia onions, some leftover steak and a smidge of horseradish). Personally, I work hard enough during the day to metabolize the the small amount of "evil" butter and cheese. Life is short - work hard and enjoy dinner. Thanks for a wonderful way to use up a very prolific garden veggie.

Almond Butter

Great recipe to customize to your liking. I roasted the almonds in a 300 degree oven for 15 minutes and tossed about cup of flax seed on the almonds the last three minutes. Creamed the dickens out of the flax and almonds in the food processor with a tablespoon or so of honey, a pinch of sea salt and as much EVOO as I needed to get to the consistency I wanted....maybe 2 or 3 tablespoons. Yummy!

Chex®icago Party Mix

Very good, quick and easy to make gluten free (swap rice, cinnamon or honey nut chex for the wheat chex and leave out the cheese crackers). Also, if you want a laugh, change the quantity to 15 servings and it calls for 43 cups of chocolate chex! Wow!!! LOL!

I'm native Vermonter. This is called sugar on snow and always served with crisp dill pickles and homemade donuts. It's a Vermont sugar season tradition.

Devils on Horseback

These are awesome!! I had these back in the 80's when I was stationed in Bermuda. Feel free to substitute walnuts for the almonds, apricots for the dates, I've even used smoked oysters and sliced water chestnuts wrapped with the bacon ... limitless combinations.
