Mulligatawny Soup I

It turned out chunky and full of flavor and moderately spicy. You can start this just like a regular chicken soup w/o the broth. I had the breast bones, so I added them along with a cube of chicken bouillon to get the flavor, and also added two cups more of water. Other than that, it was no sweat to make it, but to eat it :-). We never had this soup before -only heard about it in the soup nazi episode of Seinfeld- so I think that was an advantage.

Coconut Milk Flan

This recipe is great. I didn't need to make any changes. I used creamy coconut milk, though. By the way, if you can't find 4 oz. ramekins, don't worry. You'll need the regular ones (7 oz.).

Dave's Low Country Boil

We just made this, but used dry crab boil. It was really good. We added 1/2 chopped onion and 2 garlic cloves. We also removed the potatoes, corn and sausage -after cooked- and some of the onion and garlic into a fry pan and gave them a stir over 1 tbsp of butter for 2 minutes. This made the taste even better.

Turkey Breast Roulade

We just made this for thanksgiving and the results were great. I just added some salt and pepper to the turkey before adding the filling. Better than expected.

Fabulous French Loaves

I always thought making bread was difficult. Not anymore! I even used all purpose flour and it turned out pretty good. I used half of the ingredients and it was no sweat. We will make it every week, if possible.

Grandmother's Buttermilk Cornbread

I made the recipe as indicated and it turned out pretty good. The second time it was even better than the first one. It was easy to make, took no time, it had a nice taste and texture and it will be a great addition to your breakfast, lunch, or dinner table.

Turkey and Quinoa Meatloaf

This recipe was a total surprise, because it really came out delicious! I used steak sauce instead of Worcestershire. For the rest of the ingredients I ended up using almost the same amounts and baked it for an hour. This is the second time in my life that I had meatloaf, and from now on, I will be making it for the family very often. I used mashed potatoes as a side dish.

Braided Easter Egg Bread

Very easy to make. Of all the recipes I use for bread so far, this is the more satisfying in terms of taste and texture. It did not take long to make either, 40 minutes in the oven, Great recipe. My wife, who is not a big bread fan, ate most of it.

Fluffy Pancakes

Easy to make. I sifted the flour and used powdered butermilk, and oil instead of butter, and even with those substitutions, it turned out great. Also the measures were spot on as I got exactly 8 pancakes, all the same size. This will be my only pancakes recipe from now on.

Cobb Salad

I used turkey bacon and left out the blue cheese and avocado since I did not have any. Even without them, the salad turned out pretty good. Next time I'll make sure to add those two. I did not need much dressing either.

I followed the recipe from beginning to end, and even with margarine and soy based coffee creamer, I obtained a satisfying and tasty meal. Next day, leftovers tasted even better.
