Braided Easter Egg Bread

Very easy to make. Of all the recipes I use for bread so far, this is the more satisfying in terms of taste and texture. It did not take long to make either, 40 minutes in the oven, Great recipe. My wife, who is not a big bread fan, ate most of it.

Curried Coconut Chicken

I have made this dish several times. It always turns out good. Finally, yesterday I decided to break a few rules: I drained the tomatoes this time and added 1 tbsp. of crushed unsalted peanuts, 1 thinly sliced carrot, a half of a red pepper, sliced, and about 1/2 cup of choped basil leaves. the more important change is that I used duck breast. I sliced a duck breast seasoned with salt, pepper and cury powder, fried it and added to the coconut milk sauce when it was done. A lot more flavor without much extra work.

Dave's Low Country Boil

We just made this, but used dry crab boil. It was really good. We added 1/2 chopped onion and 2 garlic cloves. We also removed the potatoes, corn and sausage -after cooked- and some of the onion and garlic into a fry pan and gave them a stir over 1 tbsp of butter for 2 minutes. This made the taste even better.

Turkey Breast Roulade

Peruvian Alfajores

I replaced the shortening with butter and it turned out perfectly. If you don't want the dough to stick to the surface, spread some flour on the surface, and also on your rolling pin. don't roll the pin from one extreme of the dough to the other, but roll in short intervals. You can add some shredded coconut for gasnish after the alfajores are done.

Grandmother's Buttermilk Cornbread

I made the recipe as indicated and it turned out pretty good. The second time it was even better than the first one. It was easy to make, took no time, it had a nice taste and texture and it will be a great addition to your breakfast, lunch, or dinner table.

Quick Yeast Rolls

It was so simple to make that I still cannot believe it. Yeah, the dough was a little sticky but I could still work with it. I put it all in a baking pan and used a knife to make cuts to get individual rolls. I even received kudos from my wife, who is not a fan of bread.

Turkey and Quinoa Meatloaf

This recipe was a total surprise, because it really came out delicious! I used steak sauce instead of Worcestershire. For the rest of the ingredients I ended up using almost the same amounts and baked it for an hour. This is the second time in my life that I had meatloaf, and from now on, I will be making it for the family very often. I used mashed potatoes as a side dish.

Fluffy Pancakes

Easy to make. I sifted the flour and used powdered butermilk, and oil instead of butter, and even with those substitutions, it turned out great. Also the measures were spot on as I got exactly 8 pancakes, all the same size. This will be my only pancakes recipe from now on.

Cobb Salad

I used turkey bacon and left out the blue cheese and avocado since I did not have any. Even without them, the salad turned out pretty good. Next time I'll make sure to add those two. I did not need much dressing either.
