Coconut Custard Pie I

I tried with half the ingredients, for me and my wife (she's not a real fan of sweets) and it was so good. I only used two thirds of the sugar and mixed it with the butter before adding the rest of the ingredients. Two thumbs up! After many disappointments in the kitchen, finally a little bit of encouragement.

Easy Paella

My wife and I just made this one and the outcome could not have been better. I highly recommend replacing the chorizo with smoked turkey sausage to go easy on the fat. Great recipe.

Grilled Rock Lobster Tails

Honey Cake III

Better than expected. I made it for three portions on Ramekins and used fresh OJ. maybe a little too sweet says my wife, and maybe she's right. Other than that, It's worth giving it a try.

Sweet and Sour Chicken I

I didn't know this recipe was so easy! It turned out quite well. I lowered the sugar and the vinegar a little bit to make the flavor a little less intense, but regardless of that, it was tasty. I used yellow color powder since I did not have orange food color. Definitely, a keeper.

Easy Garlic-Lemon Scallops

Great flavor. My sauce got a little dry. I left the scallops too long on the frypan. Should have indicated it in the recipe. Other than that, easy and yummy.

Curried Coconut Chicken

I have made this dish several times. It always turns out good. Finally, yesterday I decided to break a few rules: I drained the tomatoes this time and added 1 tbsp. of crushed unsalted peanuts, 1 thinly sliced carrot, a half of a red pepper, sliced, and about 1/2 cup of choped basil leaves. the more important change is that I used duck breast. I sliced a duck breast seasoned with salt, pepper and cury powder, fried it and added to the coconut milk sauce when it was done. A lot more flavor without much extra work.

Dave's Low Country Boil

We just made this, but used dry crab boil. It was really good. We added 1/2 chopped onion and 2 garlic cloves. We also removed the potatoes, corn and sausage -after cooked- and some of the onion and garlic into a fry pan and gave them a stir over 1 tbsp of butter for 2 minutes. This made the taste even better.

Quick and Easy Chicken and Tomato Pasta

You can't give this recipe less than 5 stars! I can't believe it turned out this good. I changed the quantities a bit just based on what I needed and added oregano, wine and garlic. I did not even need the parmesan. This one is a keeper.

Peruvian Alfajores

I replaced the shortening with butter and it turned out perfectly. If you don't want the dough to stick to the surface, spread some flour on the surface, and also on your rolling pin. don't roll the pin from one extreme of the dough to the other, but roll in short intervals. You can add some shredded coconut for gasnish after the alfajores are done.

I always thought making bread was difficult. Not anymore! I even used all purpose flour and it turned out pretty good. I used half of the ingredients and it was no sweat. We will make it every week, if possible.

Grandmother's Buttermilk Cornbread

I made the recipe as indicated and it turned out pretty good. The second time it was even better than the first one. It was easy to make, took no time, it had a nice taste and texture and it will be a great addition to your breakfast, lunch, or dinner table.
