Easy Vegetable Pot Pie

I added salt to the ingredients and made my own crust for four individual pot pies, which extended the total time to make it. Made it last night and just had it for lunch. It was actually pretty good.

Quinoa Black Bean Burgers

I used 3/4 of a cup of quinoa and got 8 regular sized patties, but I actually think 1/2 cup of quinoa is enough. I put them in the oven at 400 for 30 min. and they came out crunchy and tasty. I did not have yellow bell pepper so I used tomato, and garlic powder since I did not have garlic either. This recipe is very forgiving in terms of ingredients.

Zucchini and Potato Bake

The easiest and most rewarding meal I have ever made. It also works as a side dish with pretty much everything. I added some carrots and yellow squash for a more colorful presentation and oregano which improved the aroma.

Bolivian Saltenas

I bought the dough discs ready from the market and it worked, though the saltenas were smaller. I used beef chunks -which I diced- instead of ground beef, and cilantro instead of parsley. These saltenas do not taste quite like the ones I used to have in the South of Peru -and of course, they taste differently in different places- but they turned out really good. I Will make this recipe often since it was easy to follow and not really hard to make. Thanks for the recipe.

Pizza Dough III

It was very easy to make, but the baking part is lacking proper instructions. I ended up baking 40 minutes and still the dough would not cook completely. Next time I am pre-baking the dough for about 10 min. maybe. Will update my review then according to the results.

Key Lime Pie IX

I followed the recipe very closely and it tasted good, but the meringue broke up a little bit and there was still liquid comming out of the filling when I cut it after chilled overnight. I am affraid even the 20 minutes I baked it is a short time. Maybe I can do it better next time.
