I have made this dish several times. It always turns out good. Finally, yesterday I decided to break a few rules: I drained the tomatoes this time and added 1 tbsp. of crushed unsalted peanuts, 1 thinly sliced carrot, a half of a red pepper, sliced, and about 1/2 cup of choped basil leaves. the more important change is that I used duck breast. I sliced a duck breast seasoned with salt, pepper and cury powder, fried it and added to the coconut milk sauce when it was done. A lot more flavor without much extra work.
