Chicken Adobo

Reviewed: Nov. 20, 2014
It was not that bad, but next time I'll use 1/2 cup of vinegar. I added potatoes and carrots, so that helped reduce the sourness.

Chicken Souvlaki with Tzatziki Sauce

Reviewed: Aug. 14, 2013
Loved it! I Marinated the chicken overnight. The sauce was easy to make. I added veggie kebabs and couscous which only added a few minutes to the cooking time. A complete meal on a budget.

Coconut Milk Flan

Reviewed: Apr. 14, 2013
This recipe is great. I didn't need to make any changes. I used creamy coconut milk, though. By the way, if you can't find 4 oz. ramekins, don't worry. You'll need the regular ones (7 oz.).

Braised Balsamic Chicken

Great flavor and texture. Easy to make and the recipe was easy to follow. I added some sugar (1 tbsp.)to balance the intensity of the balsamic vinegar.

My Best Clam Chowder

Reviewed: Dec. 31, 2012
I followed the recipe from beginning to end, and even with margarine and soy based coffee creamer, I obtained a satisfying and tasty meal. Next day, leftovers tasted even better.

Easy Chicken Posole

Reviewed: Dec. 21, 2012
I liked it. Easy to make. And if you add the sides, (tostadas, chopped green onions, red radish, shredded lettuce) even better.

It has potential, but it did not convinced me completely.

Spanish Flan

Reviewed: Dec. 21, 2012
Definitely I recommend using a water bath to put the flan in the oven. The texture will be perfect.

Harvest Salad

Can't change anything here. Though I used strawberry jam. Other than that you can't lose here. Outstanding recipe!

Buffalo Chicken Wings III

Reviewed: Oct. 30, 2012
So easy to make and yummy. This recipe is fool proof. The hard part was to make the sides: fries, carrots and celery sticks, and a blue cheese sauce. 30 min for the chicken is not enough. It's more like 1 hr. We'll make this one often.

Cobb Salad

Reviewed: Oct. 18, 2012
I used turkey bacon and left out the blue cheese and avocado since I did not have any. Even without them, the salad turned out pretty good. Next time I'll make sure to add those two. I did not need much dressing either.

Fluffy Pancakes

Reviewed: Sep. 10, 2012
Easy to make. I sifted the flour and used powdered butermilk, and oil instead of butter, and even with those substitutions, it turned out great. Also the measures were spot on as I got exactly 8 pancakes, all the same size. This will be my only pancakes recipe from now on.

I made this for breakfast and my family liked it. Easy to make, which to me is as important as the taste of the food.

Easy Vegetable Pot Pie

Reviewed: Apr. 13, 2012
I added salt to the ingredients and made my own crust for four individual pot pies, which extended the total time to make it. Made it last night and just had it for lunch. It was actually pretty good.

The right consistency. Too much salt, though. Sifting the flour is a great tip for newbies like me.

Quinoa Black Bean Burgers

Reviewed: Apr. 11, 2012
I used 3/4 of a cup of quinoa and got 8 regular sized patties, but I actually think 1/2 cup of quinoa is enough. I put them in the oven at 400 for 30 min. and they came out crunchy and tasty. I did not have yellow bell pepper so I used tomato, and garlic powder since I did not have garlic either. This recipe is very forgiving in terms of ingredients.

Zucchini and Potato Bake

Reviewed: Apr. 11, 2012
The easiest and most rewarding meal I have ever made. It also works as a side dish with pretty much everything. I added some carrots and yellow squash for a more colorful presentation and oregano which improved the aroma.

The video by Chef John helped a lot since it gives a couple of important tips. My only issue was the salt. I will use less next time.

Bolivian Saltenas

Reviewed: Mar. 3, 2012
I bought the dough discs ready from the market and it worked, though the saltenas were smaller. I used beef chunks -which I diced- instead of ground beef, and cilantro instead of parsley. These saltenas do not taste quite like the ones I used to have in the South of Peru -and of course, they taste differently in different places- but they turned out really good. I Will make this recipe often since it was easy to follow and not really hard to make. Thanks for the recipe.
