Asian Salmon

Love it. I agree with all the other reviews though: half the EVOO and double everything else. I cooked almost 2.5 lbs. of salmon and used 2.5 times as much on the marinade ingredients and it was barely enough. I also cooked the salmon for 20 minutes, drained the marinade and then broiled the salmon until ready. I am definitely making this again. Rice: Brought the rice to a boil with butter, then added lemon juice and dill, shut off the heat and covered for 20 minutes. Delicious.

Stuffed Shells III

This is a great recipe, but I don't like it with mushrooms. I also added cooked italian sausage and nutmeg to the filling and used cottage cheese instead of ricotta.

Naked Shrimp Pasta

Excellent! The only change I made was that I used cheese stuffed tortellini instead of plain pasta, but I know it would be great either way.

Tofu Parmigiana

This is excellent! I press dry the tofu with paper towels and use egg instead of water, but that's the only change. Everyone in my house loves it, including my 11 year old tween and my husband. It's really difficult to find a recipe that they both like. :-)

AH-MAZ-ING!!!! The ONLY change I recommend making is less EVOO in the sauce and more EVOO in the pan to fry the chicken. That's it! I didn't have fresh basil, so I used dry basil and it turned out great. My husband took leftovers to work. He NEVER does that.
