Easy Beef Stroganoff

My husband loved this (and isn't that what's most important?) and so did I. I thought it was nice and mild, certainly very easy! I added another spoonful of sour cream to my bowl, but my husband thought that the flavor was perfect without any more sour cream. I used ground turkey instead of ground beef because it's less expensive and tastes great (not overly beefy). Other than that, I followed the recipe as is (except for cutting it in half). I was surprised how quick and easy it was. So much better than Hamburger Helper!

Awesome and Easy Creamy Corn Casserole

This really is very easy. I wanted to "test drive" this dish before Thanksgiving and I have now made it twice for my husband. It's made the cut! We think that it reminds us of hushpuppies so we call it "Hushpuppy Casserole." The first time I made this I added the extra water from the canned corn, as suggested. That made it overly moist. This time I poured in only half of the corn water and we both thought the dish was better (it was a little firmer). I agree that real butter is the best (but the first time I used margarine, and it tasted fine!) My mother-in-law suggested adding bacon, too. I find, depending on the dish, it might take longer to bake than you were planning on. Still, nothing beats this dish--YUM!

Baked Spinach

I was very disappointed in this dish after reading so many wonderful reviews. I might make it again in the future, but I will alter it some. I think that the directions are a bit confusing. I layered the spinach and flour and then poured the eggs in the middle (I used more eggs as suggested) but the eggs and milk didn't seem to mix well while it cooked. I was thinking they would. Then I used sharp cheddar because I had it on hand so the topping was too strong of a taste (this was probably my own fault). Next time I think that I will make this dish more like a quiche and blend the milk and eggs. I might even put the flour, spinach, milk, eggs and cheese in a food processor because the worst thing about the dish was it's odd consistency and lumpiness. It was like scrambled eggs with spinach topped with breadcrumbs and cheese. Yuck.

Creamy Vegetable Chowder

This was a good "cold winter's day" soup, yet it seemed to lack a little something. It may be that I would have preferred it to be thicker (which I could certainly do next time by mashing the potatoes up a bit). I think I also cut the veggies too large. I think it would have been better if I had cut up the veggies into smaller (corn size) pieces and maybe I'll think of additional veggies to add. I think I will make this again. I'll use more pepper than I did this time (pepper suits this dish well).

Burrito Pie

I was very disappointed in this, although my husband liked it. I used ground turkey (which wasn't the problem), whole pinto beans, a can of Rotel, sharp cheddar and only three tortillas. I simply ran out of room in my dish (somehow I missed that you were to use a 4 quart casserole dish and I used a 10" pie pan instead BUT I had cut the recipe in half). If I were to make this again I wouldn't use Rotel and I would stick to using refried beans. I would mix the beans and the meat mixture as well. Too many "improvements" ruined this one for me. Thankfully, my husband is gracious and loves Mexican food. He had no complaints.

Green Beans with Bread Crumbs

I used this recipe to dress up a boring can of green beans on a whim and my husband and I enjoyed it! I would like to make a "fresh" version someday. Very tasty (and it wasn't gritty).

Grandma's Green Bean Casserole

Just have to let everyone know--this is still 5 Stars in our book! It's a "must" for family gatherings. They request it by name. It’s so much better than the traditional variety. First, I like using the French cut beans. Second, I hate cream of mushroom soup. Third, butter and flour make a better sauce than canned soup any day! If you find yours “lacking” then add some seasonings (I personally love Mrs. Dash). I've made it for two Thanksgivings in a row and am looking forward to this year! Usually, I omit the cheese in this recipe because I forget that it calls for it (yes, I have this memorized). I use fried onions, so I think that no one notices any lack of flavored toppings. Boy, “Grandma" was a GREAT cook!

Fried Rice I

I was happy with how this turned out, but I thought that the bacon grease affected the taste a little too much. I used a bag of mixed veggies and that helped to make the dish more lively and colorful. I think in the future, I might try a different (and cheaper) meat with this recipe (and just add oil, if need be). Fried Rice should be cost effective!

Butter Bean Burgers

I really enjoyed these burgers! I found out that I didn't have any breadcrumbs on hand, so I used Italian seasoning and some crushed soup crackers which I did have. I added fresh garlic, which I had minced in my mini-processor. I decided to mash the beans in the processor as well and I liked this because it helped the mixture to stay together when I was cooking it. I will definitely make this again and share it with my mom and friends!

Potato Latkes I

I used leftover mashed potatoes, only ONE egg and toped them with fried, diced green tomatoes (I was using what I had in my kitchen). We really enjoyed these!

American Lasagna

I agree with everyone else that this is a wonderful recipe. I'm wondering if people who said that it was "too dry" missed the directions to cook your noodles first. This is a very versatile recipe and it's easy to add veggies (I added spinach and zuc) and meat (I used both ground turkey and ground turkey sausage), or whatever else you might like in your Lasagna. It made so much that we still have some in the freezer (which is great for us to have for lunches or quick dinners--and as our family grows will be great too, so that everyone will be full!). I think I used less mozzarella in order to save some money, but I love cheese, so I will add the suggested amount next time.

Peanut Noodles

I love this recipe! I've made it three times already. I love the ginger and green onions--they really add something to the dish. I also like to add a little bit of scrambled egg, too (I guess because this is a little like Pad Thai and I've had Pad Thai with egg in it). I'm waiting to try this dish with crunchy peanut butter sometime!

Lemonade Pie III

I was looking for a copy of this recipe because I couldn't remember the proportions...but I had made it before with lemon juice (the bottled kind) instead of frozen juice mix. I don't know--I would think that the mix would make it too sweet...just a suggestion if you tried this and thought it was "too much." But this is such a great recipe (espeically for summertime) and it's so quick and easy! Enjoy!

Baked Oatmeal I

I was not as impressed with this dish, which surprised me from the great rating everyone gave it. I imagined this tasting more like a healthy cookie, but it tasted more like a toasted bowl of oatmeal. I won't be making this again. I will have to search for something else!

Shepherd's Pie VI

I have to say that this is a wonderful recipe, even when you mess it all up! If you have the basics, it will still be great. Here's my story: I started off with 4 red potatoes (I kept the good looking parts of the skin on) and several small home-grown carrots (but these turned out to be too few--my husband even said "Oh! Are there carrots in here?!"). I almost added some celery, but I found it to be too limp so I skipped it. But it probably would have added a nice dimension. I was also out of onion, so I used some garlic powder and (my personal all-time favorite) Mrs. Dash to help compensate for the loss. I used Olive Oil because it was on hand and I used turkey instead of ground beef--at the last minute. I had purchased ground beef just for this dish, but when I took it out of the fridge, it was a scary color of brown. I wasn't going to risk giving my family food poisoning! So I defrosted some ground turkey and saved the day. This is now a family favorite! I'm sure it will be great the next time I make it the right way--although I'll keep the garlic and Mrs. Dash--but for now, I can't wait for leftovers tonight! (I just had to come back and say that I made this again with beef, celery, plenty of carrots and an onion and it was just as wonderful. Now I have to try to keep from making it every week. It's very filling and makes for lots of leftovers which is something I like in our house--less cooking and lots of lunches! We love it! Thanks!)

Fabulous Homemade Bread

I gave this four stars, although I didn't like it one bit, but that's because I think I was the one who messed things up: I had bought whole wheat flour just for this recipe and I was planning on only using whole wheat, as several users recommended, but as I was scooping it in I thought it looked too hearty, so I changed plans and used some all-purpose flour (about half and half). I have since come to find out that this was NOT the kind of flour to add. There is a reason why they make "bread" flour. My loaf was heavy, bland and I don't think I will be making this again. But it's not because the recipe isn't a good one--I'm just not happy with my mistake and I'm not happy with the wheat flour I bought. Best of luck to you, though!

Banana Bread II

I don't know what I'm looking for in a banana bread, but I didn't find it here. This is only an average loaf, so I'm still on the hunt. I won't make this again. But if you like a good, traditional banana bread, try this and you will probably be happy with it. It's just not what I was hoping for.

The Best Chicken Salad Ever

This was the first time I ever made chicken salad and I was so pleased with the results. I could have eaten it all up before I served it to my guests! Personally, though, it was drier than I would have liked once I made my sandwich. So I spread a little more Miracle Whip on my bread and it was perfect. This is now my offical recipe for life! Although, I'm not so sure that I will need to have the coleslaw dressing in the furture. Miracle Whip adds the same sort of flavor as the Kraft dressing I bought. I can add some more spices (like curry or dill or garlic) myself. Enjoy!

Blueberry Coffee Cake I

My cake did not turn out as moist as I expected, but I still received many, many compliements on it. I have this in my recipe book, but I'm not sure if it will remain a family favorite. The batter was devine, though...
