Fresh Southern Peach Cobbler

Florentine Tomato Soup

Very simple, earthy soup. I added a little diced chiles and a pinch of red pepper. I used low sodium chicken broth and white wine. I think the pasta makes this hearty as well. Good, simple soup and I will definitely make it again.

Chicken Enchiladas

I tried this because I wanted to do something different than a traditional enchilada, and this was definitely different. The cream of chicken soup did make it creamy but it was just OK. I would definitely add salsa to the soup mixture to give it a little something extra.

Stuffed Pork Chops III

This cooked perfectly. I didn't give 5 stars only because the stuffing was so-so. I did add sauteed celery, onions, and garlic to make the stuffing meatier. I grated some apple into the broth (chicken broth instead of beef broth) while it was simmering and the apple melted right in. I will make this again, but will play around with the stuffing.

Scalloped Potatoes and Onions

This was delicious, creamy, and simple. I added ground mustard and garlic powder. During the last 30 minutes, I topped with parsley and shredded cheese. Perfect.

Creamy Chipotle Chicken

Good, flavorful sauce, depending how you spice it. I used 5 chipotle peppers, cream of mushroom instead of cream of chicken, added diced jalapenos; I omitted the butter and used sour cream; I mixed together the sauce first in the crockpot and then placed the chicken inside to insure that the sauce gets mixed well. I served it over rice but I actually think this would be great with penne or as a spicy pasta sauce.

Roasted Brussels Sprouts

I was inspired by Top Chef. One of the chef roasted brussel sprouts. It looked delicious and he won the challenge. I needed to incorporate more veggies into my diet and decided, why not? This is an excellent way to cook brussel sprouts. Add the minced garlic as a reviewer had suggested, and sea salt or kosher salt makes the difference. I was worried about the browning but it really does give it an overall great flavor. I also went with cutting them in quarters to let them cook quicker. This is my new favorite veggie.

World's Best Lasagna

If you like your lasagna spicy, this is a great recipe. My only recommendation is to let the sauce cool before putting it all together. It makes for better consistency.

Tomato, Corn and Avocado Salsa

Great recipe. Like others, I substituted the olives with black beans and added the avocado when it was time to serve it. Seasoned it with additional spices (cumin, paprika, onion powder, garlic powder, cayenne). Let it marinade for a few hours. Great flavor - very fresh, healthy. I served it with chips or as a side to our meal.

Bermuda Fish Chowder

Excellent soup base. I will reduce the veggies next as there was more veggies than broth. I added extra seasoning like all spice, cloves, cumin, cayenne, and paprika. I use walleye as I found it is the best white fish.

Guacamole

Pretty darn perfect. The lime juice, the tomatoes all give it more moisture and fresh tasting. Cilantro was a great add. The only thing I changed was added some diced jalapenos and extra seasonings (onion powder, garlic salt, cumin, chili powder, and pepper).

Blueberry Crumb Muffins

Tart and moist. I don't like my pastries too sweet so this was perfect but I can see if you do, then this recipe isn't for you. I personally liked the 1-1/2 cup blueberries where other reviewers thought that was too much. It gave it a nice tartness that I prefer. I will add a pinch of all-spice to give it a little more flavor next time. Mine only took 20 minutes and they were perfectly done.

The Best Bean and Ham Soup

I had leftover ham from Christmas. My husband suggested bean and ham soup and this recipe had simple ingredients I had on hand. Definitely make sure the fat is trimmed. Only one substitution: I didn't have V8 juice so I just bloody mary mix. Like everyone else says, it makes a big pot of soup but very good. Great for a rainy day.

Citrus Turkey Brine

This was so simple but the turkey came out so moist. My husband said it was the moistest turkey he's ever had. We didn't need a knife, the meat fell off the bone, and it was like butter in your mouth. The skin was bursting with flavors from all the citrus and herbs. One minor alteration was less salt and added soy sauce.

Breakfast Casserole

Most casseroles take longer but this one really only took 30 minutes to cooke. The ground mustard was a nice touch. I added bacon and onion. The last 10 minutes I added chopped tomatoes on top and feta cheese. The last 5 minutes I added a little more cheese on top for presentation. I served it over breakfast potatoes. My husband said it was so flavorful.

Amazing Pork Tenderloin in the Slow Cooker

The pork came out very tender. Crockpot times always differ so mine was done in less than 3 hours. I will try searing it next time like one reviewer suggested before putting it in the crockpot. I added way too much garlic so I will use less next time. I thickened it to make a gravy but I think it's best left as an au jus as the gravy was too salty. Basically, I should've left the recipe as it is! But delicious overall!

Chicken Tikka Masala

I followed the directions and took the advice of others, and omitted the salt. It was fine, but I just had chicken tikka masala at a great Indian restaurant so there was a comparison, and unfortunately there wasn't much to compare. The sauce tasted too "tomato-y" and I was so worried about the spice level that other reviewers cautioned, that I was too conservative. I don't think I will make it again, but looks to be a good base to start with.
