Easy Shakshuka
This turned out fantastic! I changed this recipe quite a bit, hence the 4 stars. To the sauce I added salt and pepper, cumin, a splash of red wine and a pinch of sugar. While the sauce was simmering, I browned up some chorizo and added it to the sauce while it simmered. Also I steamed some chopped asparagus and chopped kale, then added it to the sauce at the end along with some feta. The eggs didn't cook very well, next time I will fry then separately and add it afterwards. But wow! This turned out amazing! My husband was thoroughly impressed and he doesn't normally have a very adventurous palate. I think this recipe is a good starting point, but needs some additions to make it exceptional.

Creamy Chicken Enchiladas Verde
I liked how easy these were. Especially because I used canned Chicken - even easier. The flavor was good and really hit the spot. They did feel like they were missing something though. Perhaps next time I will throw in some tomatoes or like a previous reviewer mentioned some chips fr crunch. I cooked the enchiladas according to the directions and they were barely warm. Next time I will increase the temp. The other thing was they weren't all that saucy. It was like baking them made the sauce just absorb into the tortillas. Next time I will make more sauce, heat it up, then drizzle it on top when they come out the oven. I will definitely make them again though - just with minor adjustments!

Amazing Lemon Scones
Cooked these for nearly 20 minutes since they were still doughy after 14. That said, these were FANTASTIC. Loved the lemon flavor- the glaze was so tasty. Made these for Easter brunch and they were a hit! Will definitely make them again.
