I used this recipe to make my first cheesecake ever. There are so many recipes to choose from but I went with this one because of the great reviews. I was not disappointed. This recipe makes a nice and light cheesecake which is my preference for cheesecake. This will be my go-to recipe for cheesecake from now on.
I had to bake my cheesecake for about 70 minutes. I let it cool in the oven for only 30 minutes because I wanted to cool it down slowly but I didn't have the time to leave it in the oven for 5 hours because I needed my oven for other things. I set the cheesecake on my counter and cooled it completely before putting it in the refrigerator. I'm not sure leaving the cheesecake in the oven for such an extended period of time is necessary as my cheesecake never cracked.
