Chef John's Spanish Garlic Soup (Sopa de Ajo)

As a native Spaniard, (from Madrid), I give this recipe a 4 because is a pretty close one to be authentic. We do NOT use ham or cayenne. There is a misconception about Spanish food, we do not have that many spicy dishes at all, far from Mexican food, where they like it hot. A variation is to cut the bread in cubes instead of leaving it whole, and to stir in the egg beaten, like you do with Chinese egg drop soup.

Baked Potato Latkes

I have used this recipe (almost identical) before and it's good, but it was very disappointing and felt misled when the title says BAKED, then I found out is the same old thing. I can not give it a better rating, because there is not baking involved.

Parmesan Crusted Tilapia Fillets

Yes, it's fast and easy, but the bottom is soggy and unless you put some lemon on it, it had a "mildew" taste.

Slow Cooker Sausage with Sauce

After cooking for 4 hrs. the sausage lost a lot of texture, was almost mushy. I will cook the sausages on the grill or frying pan first, and add them to the sauce for only a few minute before serving. At least and thanks to the tip about simmering first it was not greasy.

Strawberry Fields

This salad was one of the best I ever had, and I plan on making it often. I followed the advice given in other reviews and I cut the honey/sugar amounts, it was sweet enough, more would be overpowering.

Roasted Garlic Tzatziki

After leaving in Greece for several years, and being taught how to make the real thing, I was OK with trying the roasted garlic, because it would give it more flavor, but NO way to put mint in it.

Sweet and Sour Pork III

This recipe turned out absolutely fantastic, never again I will buy sweet and sour sauce from the store. The only change I made was to substitute the celery for a couple carrots, because my family don't care for celery. (I precooked the carrots for a minute in the microwave).

Tzatziki Sauce

As others pointed out this is a good starter recipe, but you have to use "thick" yogurt, store bough "greek" variety or strained in colander for a few hours in the fridge at home. Also the cucumber is shredded and squeezed/drain of the liquid before adding to yogurt or you will have a runny consistency far from the real Taztziki Sauce.

Shrimp Pil Pil

I am from Spain and Pil Pil in dishes mostly means having parsley. You could just add a tbs of chopped fresh parsley, to see if it's closer to what you enjoyed there.

Cory's Best Calamari

I am from Spain, where you find this dish in every restaurant as "Calamares a la Romana", the most simple yet delicious way to serve calamari. Drizzle with some lemon juice before eating, wonderful!
