Chicken Breasts in Caper Cream Sauce

This is one of my favorite chicken recipes. It is easy and very flavorful. I don't think it would be quite as nice if you made it with regular milk and flour or corn starch as other readers have done. Then it becomes gravy rather than sauce?

Shrimp and Artichoke Linguine

This was just ok. The regular recipe is bland and it took a lot of experimenting with seasonings to keep it from being a total loss. The suggestions of red pepper flakes and pine nuts are probably helpful for this dish.

Pita Pizza

This is 5 star as written, but it is also great in the oven (using Pam instead of olive oil). I also make it veggie style with mushrooms, tomatoes and broccoli. Hubby likes it with bacon, bell pepper and tomatoes. Thanks for the inspiration!

Tuna Noodle Casserole from Scratch

This was good as written, but it did need more seasoning. This recipe became a 5 star with adjustments. I used cream instead of flour and milk and added 1 tsp nutmeg, 1/2 tsp thyme and salt.

Easy Vegetarian Pasta

This recipe would have been 5 stars if there had been suggestions of seasonings. I found it to be a bit bland as written, but really good when you season it. I used Italian season, onion powder, basil, salt & pepper.

Macaroni Salad I

I really debated about whether to give this recipe a 4 or 5. I was glad that I followed my instincts and used about a third less dressing, but it was still too much for my taste. However, it is really a good salad, and I will make it again with half the salad dressing.

Hash Brown Casserole II

I am rating this recipe as written. I would suggest cutting the butter by half, as I had to take a paper towel and dab the puddles of melted butter that had floated to the top. Otherwise, a good recipe. I also tried with french fried onions, another good suggestion from another reader.

Broccoli Potato Soup

This is a good soup as written, but as others said, it doesn't make very much. I now steam the broccoli rather than stir frying it, including the stalk. I put the cooked stalks with the milk in the blender before adding it to the rest for a bit more flavor.

Simple Cauliflower Soup

Recipe is good as written and I rated it as such. I have started making this recipe by blending most of the cooked veggies and stock until smooth, then I add nutmeg and about a cup of cooked cauliflower florets, carrots and celery.

Barb's Broccoli-Cauliflower Salad

Husband kept saying how much he loved this recipe. The 5 stars is based on how the recipe is written, but I now make it with about 1/8 cup of honey instead of sugar and a creamy cucumber vinaigrette dressing to cut the sugar and some of the fat. Nobody notices the difference.

Veggie Pot Pie

This is a delicious recipe as written and I rated it as such. However!!! If you are not the type of cook who just loves being in the kitchen and knows all the shortcuts or have the right food processor, you might not want to try this recipe. I am not one to want to spend hours in the kitchen (cooking for only 2 people) and because of that, I will not make this again. With all the cutting and dough making, it took me a whole lot longer than 30 minutes prep time.

Thyme Green Beans with Almonds
