DONA MARIA® Fish Tacos

This was good. I used hard taco shells as it was what I had on hand and would definitely say that the soft shells are the way to go. If you cannot find the specific seasoning, use a mix of cumin, chili powder and onion powder and skip the bouillon, it is equally as good.

This was good as written but I think the dish needed help with seasonings (onion powder, Italian seasoning) and a good quality of olive oil poured over the pasta after plating (to taste).

Corn and Black Bean Salad

I gave this 5 stars as written, but I as I use a very high quality balsamic vinegar that has a powerful taste I will probably use less of it the next time. This is a great quick and easy side dish, love it!

Chestnut, Lentils and Vegetable Stew

I was not expecting this to be as good as it was! I do not usually like stews so much but I was going back for seconds like everybody else! I couldn't find canned brown lentils and used dried. Delicious!

Wicked Garlic Tofu Saute

I'm surprised that more comments are not made about the 6 cloves of garlic. If I make this again I will use half that much! I love garlic, but that was all I could taste in this dish! The only change I made was using fresh veggies instead of frozen.

Yellow Squash

This was easy and delicious as written! My alternate method was to steam the squash slices to preserve the flavor and to have less soggy squash. I sautéed onion slices in the butter before adding everything else.

Hash Brown Casserole II

I am rating this recipe as written. I would suggest cutting the butter by half, as I had to take a paper towel and dab the puddles of melted butter that had floated to the top. Otherwise, a good recipe. I also tried with french fried onions, another good suggestion from another reader.

Broccoli Potato Soup

This is a good soup as written, but as others said, it doesn't make very much. I now steam the broccoli rather than stir frying it, including the stalk. I put the cooked stalks with the milk in the blender before adding it to the rest for a bit more flavor.

This is 5 star as written, but it is also great in the oven (using Pam instead of olive oil). I also make it veggie style with mushrooms, tomatoes and broccoli. Hubby likes it with bacon, bell pepper and tomatoes. Thanks for the inspiration!

Baked Green Tomatoes

I found these to be too dry. I saw a previous comment that said hers were too greasy, but I didn't get that since there is no oil or grease in the recipe. Perhaps it depends on the tmayders (tomatoes).

Simple Cauliflower Soup

Recipe is good as written and I rated it as such. I have started making this recipe by blending most of the cooked veggies and stock until smooth, then I add nutmeg and about a cup of cooked cauliflower florets, carrots and celery.

Barb's Broccoli-Cauliflower Salad

Husband kept saying how much he loved this recipe. The 5 stars is based on how the recipe is written, but I now make it with about 1/8 cup of honey instead of sugar and a creamy cucumber vinaigrette dressing to cut the sugar and some of the fat. Nobody notices the difference.
