Anise Walnut Biscotti

Reviewed: Jan. 4, 2010
This recipe is AMAZING! I made some minor changes, 1c. whole wheat flour, omitted anise flavoring and seed, 1 tsp orange extract, 2 tsp orange zest and 1 1/2c. walnuts. I wanted to use dates but forgot to put them in before I started baking so I'll do that next time. I have not made biscotti before so, really didn't know what to expect. The dough is quite sticky so I used some whole wheat flour and made my log shapes on the counter, then transfered to the ungreased cookie sheet. I used the whole egg wash. The recipe did not call for salt and I used unsalted butter but I will use regular butter next time. When I did the second bake I found laying them flat on the cookie sheet produced a better browning/drying.These were so yummy, my hubby even shared with one of his buddies, chick food he calls it, funny, chick food is pretty good. Thank you so much for posting this recipe. It's a real keeper.

Cherry Winks

Reviewed: Jan. 5, 2010
Like many other comments, this was always on our cookie tray for Christmas. Mother always put in dark brown sugar also, so I added like 1/8 c. and when we rolled ( more fun for us kids then cutting up all those STICKY dates... oh the torture lol) the dough we kinda pressed the cornflakes in a bit. I was out of red cherries and only had the green so I didn't get to put any into my dough just on top. The cookies still came out great but I sure could tell they were not there. Also Kelloggs corn flakes are a must, they have the distinct flavor I always remembered.

White Cake Frosting I

Reviewed: Jan. 29, 2010
Really wonderful, I made a chocolate version. !/2 c. crisco, 1/4 c. unsalted butter I used my kitchen aid mixer and beat this on med speed for 20 mins, it makes all the difference. I sifted together 4 1/4 c. powder sugar, 1/4 c. dutch cocoa 1/8 tsp salt. I added this alternately 2 TBS whipping cream, 4 tsp strong brewed coffee, 1 tsp vanilla. Beat this till everything is nice and fluffy (adjust the liquid to your desired consistency) Wow this made enough to frost a two layer cake split into 4 layers just barely, I really wanted another cup. super yummy and sooooo easy. Rave results from your guests and family.
