Banana Chocolate Chip Cookies

Don't cook these at 400 for 12-15 minutes! My first batch was over-done at 12 minutes. I lowered my temp to 375 and my time to 10 minutes. I like a cookie to be slightly soft. These were delicious with the adjusted cooking time/temp. My modifications - used half brown sugar, half white. Also used Reese's pieces instead of chocolate chips. I probably wouldn't do that again as the color came off the candy. Regular choc chips would be better.

Tantalizing Turkey and Blue Cheese Meatballs

I've been a member of AR for years. It's my go-to source for recipes. Not often have I felt compelled to rate a recipe, but this one is *ridiculously* GOOD. Read the helpful hints from others. My only modifications were a little more bread crumbs, the mixture was pretty wet. (I added about 1/4 cup.) And less pepper. I used 1 TEASPOON, not tablespoon. Be sure to spray your foil with cooking spray. That's it. These. Are. Awesome. And easy. I'll make these from now on!

Best Peanut Sauce

At the very last minute, I was looking for something to jazz up some chicken and broccoli. This was wonderful, and don't be afraid to modify! I used less PB, brown sugar instead of white, a smidgen of balsamic vinegar, a little powdered ginger and some crushed red pepper flakes. Next time I would add more garlic, maybe some lime juice. Fun to play with. I would think you could make a batch ahead and stick it in the frig for next time. We served ours over thin spaghetti. Really good.

Slow Cooker Reuben Dip

The family loved this dip. I used half processed swiss, thought it might melt better, the other half Monterey Jack. Did not have any 'real' corned beef, used two of the packets, diced up. I don't like sauerkraut, and I liked this. Bought a big loaf of unsliced rye for dipping. Just broke off hunks and slopped it up! Yum.

Blueberry Cream Muffins

This recipe lives up to its rating. I used butter, almost melted. I always choose butter over oil. I also followed other suggestions and used half brown sugar, half white. Since I used butter that was not totally melted, my batter was thick. I added a little (almond) milk to thin it. Using oil, this probably would not be necessary. When mixing, I added the sour cream to the sugar/egg mixture, then added the flour mixture. I also made some mini-loaves. It tastes wonderful. Rich, moist. It definitely rivals my mother-in-law's!

Creamy Chocolate Frosting

Wow. Smooth, creamy, perfect. Thought it would be too sweet, but it's not. I used an 'earth's balance' butter, it was all I had. No problem. I was looking for more of a glaze, so I thinned this a bit with some cold coffee. This is going to be hard to resist. Definitely licking the beater.

Peanut Butter Cookies IV

Perfect! Slightly crispy on the outside, chewy on the inside. I always add more salt and vanilla in any cookie recipe, and under bake by a minute or so. These are great at 9 1/2-10 minutes. I am making them to give away, so I was relived that they turned out so good. The hubby thinks they are 'no good and should stay home'.

Lemon Cheese Ball

I purchased something similar from an expensive home-show party, called a Key Lime Cheese Ball. This is better! I used unsweetened lime kool-aid (.13oz) but not the entire packet. Maybe 2 tsp. I didn't want it to be too strong. This is great served with pretzels or wheat thins. Super easy and yummy. A big hit.

Cathy's Banana Bread

This is no longer Cathy's banana bread - it's mine! I use half brown sugar, half white. I also add half a bag of chocolate chips. Maybe a teaspoon of cinnamon. It is a great recipe, my 'go-to' something to bake. Darn, the bananas are brown? No worries! The sour cream is really the ticket.

Super Easy Chicken Chili

CUT BACK ON THE SPICES!! I used 2 teaspoons of cayenne, 3 tablespoons of cumin, and 1 tablespoon of chili powder. I also added 2 full cans of broth (with one half can, the other half goes where?) and a smidge more sour cream. My house smells so good right now. Easy to make, no mess. I just used one large 3 qt.fry pan. Easy and delicious, will make again.
