Ginger Snaps II

My first attempt at ginger snap cookies, and these really are no fail! I used butter instead of shortening (same amount), and doubled the spices, and they were delish! I kept the 9 minute time even tho they still looked very mushy when they first came out, but they set as they cool. There is a certain crispiness when you first bite them, bu then they are soft and chewy - i love the texture.

Frozen Chocolate Chip Cookie Dough Balls

I found this recipe and was so excited to be able to share it with my good friend who is allergic to eggs - she had never had cookie dough before! Unfortunately she has more self control than I do, and I ended up eating most of these tasty morsels. But oh well, the holiday season is all about overeating right?! I just can't resist the vanilla-brown sugar taste, it was heaven in my mouth.

Super-Delicious Zuppa Toscana

OOoooh my goodness, sooo tasty! There's a reason this recipe is so highly rated! I just made this soup a few days ago and have been feasting on the leftovers since then, and it only improved during its time in my fridge! I just finished it yesterday, but already I am contemplating making more. Next time I make it I think I will either use hot italian sausage, or add more chili flakes, because I love things spicy. This soup had a kick to it, but nothing too extreme in case anyone was worried. Oh, and I also used kale instead of spinach, and it held up beautifully in my leftovers. Also, I didn't drain the sausage as well as i should have and the grease was really orange, and made the soup less appetizing looking. I ended up cooling the soup and skimming the top layer of orange off before reheating and serving.

Mmmm, sooo delish! I made a few alterations, namely doubling the garlic and halving the mayo, but it came out fantastic!

Slow-Cooker Chicken Tortilla Soup

Wow, I just recently made this soup and I can't overstate how much I loved it. I changed a few things, like using all chicken broth instead of water and adding some extra serrano chiles (i like things spicy), but for the most part the recipe is right-on, and its incredibly easy to make. I followed the advice of other reviewers and just threw the chicken uncooked into the soup, and after a few hours the chicken was just falling apart, you don't even really need to shred it. My boyfriend actually said it was literally the best soup he had ever had :) but then again, he may be a little biased...
