Chocolate Bourbon Pecan Pie
Love, love LOVE this pie! I made some minor adjustments per other people's reviews. I used 3 Tablespoons of Bourbon, and I thought it could have used a little more (I'm a fan of bourbon). It was VERY rich, chocolate-y and decadent. I was able to make 2 9-inch standard pies with this recipe (I don't own a deep dish pie pan). I can already tell that I will be making this again and again.

The Best Banana Bread
I used 4 medium sized bananas (roughly equivalent to 2 cups), and found that it wasn't as "banana"y as most banana breads I have had before, next time I think I'll try a recipe that calls for more banana. I also made the mistake of following "MomSavedByGrace"s review on the recipe page and let it cook for 45 minutes so that it would not dry out too much per other people's reviews. Although two toothpicks stuck in the center came out clean, after I let it cool I noticed that the entire middle of the bread had not cooked. In the end I had to throw it out after only being able to salvage an end piece. It did smell wonderful cooking though.

Fluffy Pancakes
Perfect and Fluffy. The best pancakes I've ever had or made. The only alteration I made to this recipe was to follow another person's advice and let it sit for a half hour after mixing the ingredients together. I also stop stirring when the mixture starts to foam. I've made this recipe a few times and the hardest part is waiting the half hour! It's easy to make and it's ingredients are stuff you already have around the house.
