Garden Fresh Tomato Soup

This soup is amazing! I have made it twice and have tried to follow the directions closely. I do not have a food mill. I strain the cooked tomato mixture using a chinois, squeezing out as much liquid as possible. I then discard what is left. I do not believe that this mixture was meant to be pureed.

This is a great base soup recipe. I emptied my refrigerator of any vegetables that needed to be eaten soon, including some tomatoes (in place of some of the tomato sauce), a sweet potato, cabbage and frozen spinach. I used 5 cups of frozen turkey broth that I had left over from making turkey carcass soup after Thanksgiving, no water. I used dried herbs as I did not have fresh. I also added a 1/2 pound of browned Italian sausage. The broth is incredibly flavourful. It made a lot of soup and I will be enjoying this great soup all week.

Refried Beans Without the Refry

I have made this recipe many times. It is so easy. I do not add all of the salt that it calls for and I have tried many of the variations suggested in other reviews. It always comes out well and I have shared the recipe with many people. I freeze most of it in cup-size containers and use it to make breakfast burritos with scrambled eggs, sour cream, chopped tomatoes, shredded cheese wrapped in flour tortillas. I have the tortillas divided in small packages in the freezer and can make these with very little notice using the microwave to thaw out the frozen items. Be careful to thaw the tortillas at a very low setting so they do not become tough.

World's Best Lasagna

This recipe definitely deserves its popularity. I have been making it for about a year now. I have followed some suggestions by other reviewers. I don't add any salt to the meat sauce or to the ricotta mixture. I think the recipe is plenty salty with the sausage and the cheese. I also prefer to use shredded mozzarella. Yesterday I made the recipe with regular bulk sausage (not Italian) and I liked it better because the end result wasn't as sweet as it is when I use the sweet Italian sausage. The best part of my latest attempt to perfect this recipe was to make my own lasagna noodles. The process of making the noodles added more time, but it wasn't as difficult as I had thought it might be. It made a world of difference.

Hearty Vegetable Lasagna

I was very pleased with the results of this recipe. I cut the recipe in half to make a smaller lasagna for one of 8 dinner guests who is vegetarian. The meat eaters sampled it and loved it too. As per other suggestions I added some carrots. I didn't have pasta sauce on hand. I substituted a can of chopped tomatoes, some tomato sauce and Italian seasoning.

Simple Pesto Pasta

I used a red pesto from a bottle. I prepared homemade spaghetti. The combination was great. Given the time I spent on the spaghetti, I was very happy to find a simple sauce recipe. My husband loved the smell and the taste. I didn't even have to call him to come for dinner.
