Zucchini Brownies

Fantastic recipe! It takes a little time to shred the zucchini but it was great. The batter looked rather lumpy/stringy even though the zucchini was very fine, but it came out smooth and even. I do think this is more like a fudge cake, but I don't discriminate between fudgey desserts - brownie, cake, cookie, or plain old fudge, if it's good, I'll eat it. The only change I made to the recipe was adding M&Ms instead of walnuts and sub'ing applesauce for oil. The frosting came out slightly runny, but again, liquid fudge is not a problem in my book. I will definitely be making this again and sharing the recipe.

Cuban Ropa Vieja

Absolutely delicious, and very easy. I will be making this again, probably pretty soon. I altered the recipe a little bit just to avoid going to the grocery store. I seasoned the meat with adobo before searing it. Also, didn't have tomato paste so used Goya Sofrito sauce, used a dried cilantro cube instead of fresh (this doesn't really need cilantro anyway, it's not in most ropa vieja dishes that I've had), and added extra garlic. I am sooo happy to have found this recipe!

Annie's Fruit Salsa and Cinnamon Chips

Great, great recipe. This has been a hit with everyone I've served it to. I didn't add any white sugar and added only half of the brown sugar to the fruit and it is still plenty sweet. I think the sugar in the preserves is more than enough. Next time I make it, I will even try it without adding any sugar at all to the fruit. The chips are great too - I've been using whole wheat tortillas, butter Pam, and dredging both sides in the sugar/cinnamon mix (1 cup sugar + 1 tsp cinnamon) - they taste great. I've been adding the leftover fruit salsa to my cereal in the morning - there's a lot you can do with this recipe.

BBQ Chili Pasta

A good dish for a quick weeknight meal, and it could probably be dressed up for company too. It was fast to prepare, very easy and definitely tasty. Based on some of the reviews, I added cumin to the turkey. I also added a can of Rotel diced tomato with jalapeno. I used slightly less than 1Tbsp of chili powder since I don't like too much heat, but it still had good flavor and the heat accumulated as you ate more. It was a good balance for two people who can handle different spice levels. I think it could be kicked up with some red pepper flakes if some diners wanted more. Again, not a very fancy dish, but we liked it and will be making it again.

Melt-In-Your-Mouth Meat Loaf

Fantastic meatloaf! I've always loved meatloaf, but this will be my new go-to recipe. Very easy and delicious. I cut it down to 4 servings to use 1 pound of meat and it came out very nicely.

Fresh Mint and Cilantro Melon Salad

It was good, but the taste of the fresh fruit was almost lost in the mint and cilantro taste. I think I would dial back the amt of herbs next time. Also, this isn't something you can save since the fruit seemed to start fermenting/spoiling quickly when stored.

Butternut Squash Bake

I loved this! I used what I had on hand, so feta instead of blue cheese and added Italian seasoning to plain bread crumbs. It still turned out really nicely and I will definitely be making it again. I think the saltiness of the blue cheese will be nice instead of the milder feta, but you probably can't go wrong either way.

Slow Cooker Pulled Pork

Great recipe - couldn't be easier and it's delicious. I had meat intended for pot roast that I prepared this way instead and it was delicious. Great for leftovers too - in salads, etc.

Sweet Potato Minestrone

Delicious on a cold day. I made a big batch of it and then put 1/2 in the fridge, 1/2 in the freezer - easy to pull out later. I also added some small dumplings (just flour and water mixed and dropped by the spoonful into the boiling soup) and topped with feta cheese crumbles when I was ready to eat.

Sweet Potato Enchiladas

Thought it sounded like an interesting recipe, but I wasn't sure how it would turn out. It was great and I will definitely make it again. We were snowed in, so I had to use what was in the house. Substituted 1/2 onion (chopped) for the green onion, taco sauce for enchilada sauce and pita bread for tortillas. By stuffing the pitas (which I had still crisped up in a saute pan first) with the potato stuffing, it added a nice bulk and made them very easy to handle. Using McCormick Mexican Seasoning is a nice short cut for the seasoning too. It was a delicious, if non-traditional, snowy night meal :-)
