Sloppy Joes II

I've always made my Sloppy Joes from Betty Crocker's cookbook. Until I came up with this one: much saucier! Did exactly what it asked for and turned out perfect. I had lots of leftovers and best part comes now: I bought this half made mini empanadita dough (In Spain, from Nestle) And filled them with a tablespoon of Sloppy Joes, baked them and froze them. They taste exactly like the empanaditas agentinas from our favorite restaurant in town.

Garbage Quiche

DELICIOUS! Used half the eggs and a bit of milk along with 5 triangle soft cheese (la vache qui rie) and basil salt and pepper. Very good!

Quinoa with Chickpeas and Tomatoes

Excellent! I would add much more chick peas... Next day I made a frittata with leftovers adding an egg, cut up "pimientos de piquillo", lots of cilantro, a bit extra of salt and pepper. Using a pan, add a teaspoon of olive oil marinated with chili peppers, it gave it a delicious spicy flavor.

Pastry Cream

I've been making vanilla pudding from my grandmother's recipe all my life. I just have changed the recipe for this one! It is AMAZING! I omitted the butter and the salt though. Also mixed half of the finished pudding with 2 ounces dark chocolate. Excellent!

Butter Rich Spritz Butter Cookies

Absolutely delicious! I omitted the almond extract and following other reviews, added more butter but just about 1 tablespoon more. I've been searching for years for the perfect Spritz recipe and I have finally found it!

Delicious recipe! thanks for sharing! After having read many reviews I decided not to alter anything but add only a tablespoon of thick natural honey. The result is amazing. I placed the cookies onto baking paper covered cookie sheets in shape of balls. Beautiful chubby cookies!

Delicious! made it a bit healthier with cut up turkey instead of bacon and added onion and garlic. As for the seasoning which I thought needed, added basil, oregano and a bit of thyme.

Single Crust Peach Pie

EXCELLENT! I would just add a bit of cinnamon. I mixed in a big bowl, the peaches with all the crumb mixture, stirred a bit moving the bowl and poured it on top of the crust. It turned perfect and the lack of cinnamon was fixed sprinkling a bit at the time of serving. Delicious warm with vanilla ice cream. 5 Stars! Will make it again and again!

Banana Crumb Muffins

MMmmmm! Sooo good! the aroma in the kitchen is... amazinglylicious! I changed a bit the recipe: substituted soy oil for the butter (not in the streusel!) added another banana and 3/4 cup chocolate chips. Made 13 muffins instead of 10. Very good recipe! :)

Pumpkin Gingerbread

I just made these today. Moist, delicious flavor! Followed Lynn's advice ad baked them at 325 for 90 min. The last 10 min I covered them with foil so they wouldn't burn. Will split them into 7 small loaves to give this season.

Cream of Zucchini Soup

Very good! I used butter instead of oil and margarine. Added garlic and unpeeled potato slices. Substituted evaporated milk and cream for the gorgonzola. And the best was a pinch of anise at the end.
