About this Cook
Truthfully, I'm not the cook in the family, although I make my share of meals, my husband is. I'm a baker at heart, but since my husband is a nutritionist,(and lactose intolerant) I've had to learn to adjust the way I bake and cook. I've really grown and developed my own healthy yet delicious style. Which was a real challenge since I'm the daughter of dairy farmers and all the women in my family bake rich and decadent things, thus I raised to bake in such a manner. :)
My favorite family cooking traditions
My favorite, but most detrimental, family tradition is using butter... lots of it... on and in everything. There is no equivalent to butter when it comes to taste, texture, and appearance, even. However, since I'm married to a man who believes butter to be the devil, I've changed my ways.
My cooking triumphs
I've learned to change the way I bake, just about everything I've been making my entire life, with healthy adjustments. All my baked goods now use half the amount of butter or none at all; Along with reduced sugars and added nutrients and fiber. And I've accomplished it without compromising the taste nor, for the most part, the texture. Some of my creations even taste Better than the original!!!
My cooking tragedies
Along the path of finding my healthy niche, I've created some truly awful, bland, and tough things. But this one thing I'm still working on, and it's just not there yet, Is a secret cookie of mine. I'll post the recipe as soon as I have it perfected, but know that I've had to travel the road of the "just-throw-it-away" cookie to finally arrive to my desired destination of the amazing a------ cookie!

Strawberry Avocado Salad
Put it on a bed of baby spinach.... oh so gooood. Makes my mouth water just typing this. I've made this salad so many times I've lost count. It's impressed everyone who has tasted it. :) THANK YOU!

Cherry Cream Cheese Cake
It's yummy. I gave it 4 stars tho, b/c I needed to make adjustments. naples is right to make it moist, cut the flour back a bit along with the b. powder. However, my husband is a nutrionist, so I adjust my baked goods accordingly. I replaced the cream cheese for neufchatel (1/3 the fat of crm. cheese). I used fat free plain yogurt in place of the butter, along with 2 tbsp. extra of canola oil for a healthy fat plus moistness. I decreased the sugar to 3/4 C. and sprinkled the nuts with a cinn. and sugar mix (2tbsp. sugar & 1 1/2 tsp. Cinn.) for a sweet relief. I used half all-purp. flour and half whole wheat flour for added fiber. Also, b/c I had it on hand, added an extra 1/2 tsp. almond extract. to add a sweet flavor without adding sugar. With or without a glaze it will still be low in saturated fat and sugar, yet moist, dense, fluffy and delicious. Feel free to split the sugar with brown sugar if you're still yearning for moisture, and 1/4 c. of toasted wheat germ for added fiber and nutrients, as well as additional nutty flavor. :) Now, if you're thinkin' that all those adjustments just compromised the delicious flavor of the cake, think again!! My husband and his entire family gobbled it up in one morning! :D

Double Chocolate Frozen Fudge Pops
Totally hits the spot on a hot summer day. Made some adjustments: - used plain yogurt instead of butter and halved the sugar. Used coarsely chopped reese's cups instead of choc. chips. So good and yet, not as evil as a brownie or candy. mmmm. THANK YOU!
