Mom's Buttermilk Pancakes

Reviewed: Mar. 15, 2012
Very fluffy and tasty. I doubled the recipe and substituted 4 tsp baking powder for the baking soda and it turned out fine (we didn't have baking soda at the time).

Never Fail Biscuits

Reviewed: Mar. 13, 2012
Easy and delicious. I had to use water instead of milk because we were out, so the biscuits didn't brown correctly when baking and I accidentally overbaked them. I'm giving this recipe 5 stars because they were STILL good!!!!!

I make these almost every weekend now. All I do is use half the butter and a little less sugar.

Grandmother's Buttermilk Cornbread

Reviewed: Mar. 13, 2012
Great cornbread! My only changes were to use 1/4 cup butter and 1/4 cup + 2tbsp honey, and add corn kernels. It was soooo good!

Vegan Pancakes

The recipe is easy and quick. These pancakes turn out really pale for me, so that took some getting used to. All in all good pancakes. Not needing milk or eggs is a big plus, since I buy them infrequently.

Chewy Brownie Cookies

Reviewed: Oct. 31, 2010
Chewy, rich and delicious. I used 1/2 cup less sugar, butter instead of shortening, and Hershey's special dark pieces instead of chocolate chips. They turned pretty well, since I prefer rich to sweet. Had to adjust temp though, because some of them burned on the outside. Will bake again.

Soft Oatmeal Cookies

Reviewed: Sep. 13, 2010
Mine were light and airy, and crunchy on the outside. Not very chewy. Maybe because I halved the recipe? They are definitely good, though.

Homemade Fresh Pumpkin Pie

Reviewed: Nov. 15, 2009
Really good recipe! But we ended up with way too much crust left over and a very thin layer of pie. What we had was delicious, though!

Very easy even without a bread maker. This is a very versatile recipe, because I made a lot of changes and even made a mistake or two, and my batch still turned out great! I will definitely make these again.

Chicken Tortilla Soup II

Reviewed: Nov. 9, 2009
Very simple and easy to make. I used fresh tomatoes rather than canned, and added corn and red sweet pepper. I skipped the veg oil and baked my tortilla pieces. Used olive oil spray to saute garlic/onions. I added the tortilla pieces to the bottom of the soup bowl after cooking rather than cooking them in the soup and it turned out fine. garnished with fresh cilantro, some of the tortilla pieces and a dollop of sour cream.

I really like how they turned out crispy! Makes me feel like you don't HAVE to deep fry fries to get them crispy :)
