Mushroom Chicken Piccata

Great recipe - we loved it! My husband made this dish and accidentally used beef broth instead of chicken and it was delicious! anyway! Next time (and there will be a next time), we'll use the right ingredients to see how even more wonderful this meal can be.

Chicken Puffs

My husband decided to get creative with this recipe the night it was his turn to cook. He added 1 finely diced stalk of celery which gave an interesting crunchiness. Then he brushed the tops of the rolls with butter and sprinkled cinnamon sugar on top. WOW. Turned this really good recipe into something even more special.

Chicken Marsala II

This was very good but it could be easier & better by combining several steps. Also, the recipe mentions using bacon, but doesn't include what to do with it. I used sweet Sherry (I didn't have Marsala wine on hand) and it added a warm and rich taste. See my revised recipe @ "Chicken Marsala III for clarification and tell me how you like it.

Baked Mushroom Thighs

So quick and easy and very taste to boot. My husband, a very picky eater raved about it. Seemed like the chicken needed salt, perhaps before coating or in the bread crumbs. Other than that it was superb.

My husband introduced me to Diet-7Up with a splash of cranberry juice-straight cran juice is too tart for me-very tasty! Then I got the idea to add raspberry flavored vodka to the mix and it's even better!

Broccoli Chicken Casserole I

I've been making an interesting sort of Indian style variation of this recipe for years. I use Broccoli Cheese Soup (undiluted) instead of Cr. of 'Shroom, delete the mayo and and the stuffing. Add 1 c. shredded sharp cheddar and 1-2 tsp of curry powder. I throw everything in the crock pot (no pre-cooking the broccoli) so it's ready when I get home from work. Then I add another cup of shredded cheddar on top, turn the crock down to low for 20 minutes or till the cheese melts.

Absolutely amazing! I have served this dish over and over with rave reviews and have been asked for the recipe time and time again. I did add raisins and sliced carrots (for texture) and replaced the water with the same amount of chicken broth. This is an easy and very flavorful meal that is a real family (and crowd)pleaser.

Sherry Braised Beef Short Ribs

Wow- just Wow! I used 1-1/2# of ribs (for two people), cooked them for the same amount of time and the meat literally fell off the bones. The recipe seemed a little labor intensive but every extra step was well worth the end result. The deep, rich, warm sauce was wonderful over Parmesan Roasted Potatoes, too. This dish has become an requested favorite in our house. The only thing I might change is replacing the Sherry with Burgundy just out of curiosity. Thanks, Chef John for another real winner.

The Best Parmesan Chicken Bake

This was a big "fail". The croutons sucked all the flavor and moisture out of the cheese, so there was a big glued together crust of dry cheese and bread on top. It turned out to be a lot of work for very little satisfaction. Also, cutting the chicking into 2" cubes would have allowed the meat to absorb the marinara. Next time, I'll skip the croutons and put the parmesan UNDER the mozzarella - if there is a "next time".

Green Chile Stew with Pork

I've made this several times and it's always a big hit-just mouthwateringly good. I add black beans and corn, just for the color and to make it a true stew. Well worth the effort.

Warm Chicken Ranch Wraps

I too thought these wraps were rather bland the first time I made them. The second time, I used the fajita-flavored rice-in-a-bag that takes 90 seconds in the micro. Big difference! I also used the pre-packaged grilled chicken strips. Those two changes took out most of the work and added a whole lot more flavor.

Easy Stuffed Zucchini II

This is just as delicious as the original as submitted by cookassi. I added onion and mushrooms and omitted ripe olives just as personal preference. Also, I doubled the meat and pasta sauce so there would be more for the big appetites in our house.
