Italian Feather Bread Pizza Dough

Tried this for a dinner party this week and my husband said it was my best ever dough! I did possibly add extra yeast as I thought I might have denatured the first teaspoon-full due to my water being a bit too hot (hence waited a little and then added the full amount again when no frothing was seen). My yeast was not quick action. I will definitely use this again. If you don't have quick action yeast, you might want to wait until you see some froth appear before attempting to combine the oil and water. Alternatively, you could add the oil and salt after waiting for the yeast to start frothing?

Easy Mushroom-Goat Cheese Empanadas

I used pre-made pastry rather than using the dough for these, but the filling is awesome. I often make it when veggies come for fajitas. They get this filling instead of the chicken pieces. In fact, they have to fight everyone else to keep it because it's SOOOO good.

Mom's Pumpkin Pie

I did a pumpkin pie comparison (2 different pies) and this was a clear winner. It didn't seem to fare well when kept for more than a day or two, but really good, even with a good couple of inches depth of filling.

Spicy Sweet Potato and Coconut Soup

De-lish. I used half sweet potato and half pumpkin and it seemed to work perfectly well! I was suspicious about the lemon juice and added it very slowly, tasting as I went - but wow! It does work. Not sure about the sesame oil - it was maybe one flavour too much.

Sturdy Whipped Cream Frosting

I used this on chocolate cake for my husband's birthday and was surprised myself by how delicious it was (kept licking bits from the bowl!). The children that helped us eat it commented on how nice the frosting was. Brilliant, will use again.

One Bowl Chocolate Cake III

I made this into a birthday cake for my husband and used 'Sturdy whipped cream frosting' on top (it was a ski-slope cake!). It was super easy and tasted fantastic. The frosting also got the thumbs up from young and old alike.

Toasted Pumpkin Seeds with Sugar and Spice

Delicious. I used individual spices rather than a half teaspoon of mixed spice, and less sugar but a great idea. I have never tried sweet seeds before, but I will definitely do this again. Thanks :)
