Bacon Wrapped Stuffed Mushrooms
I review very few recipes but this is one of them. These mushrooms are now a family favorite. Even my 14 year old son loves them and he does not like to eat new things. Give a hint to all that think the filling is too much, clean the mushrooms of the inside membranes of the mushrooms. The membranes can make the mushrooms soggy when they are being baked. I also cook the bacon brown but still pliable before I place the mushrooms in the oven. If you place the mushrooms in a cold oven and let everything warm up at the same time, the shrooms cook more evenly.

Chess Pie II
I made this pie but to call it a chess pie is a mistake. The pie is ok in its own right but a true chess pie does not have fruit or nuts, vinegar is a necessity, and a chess pie is sweeter and creamier and made with a dash of cornmeal for browning the top. The pie is pretty good for a some other kind of pie, my husband really enjoyed it and my son ate almost all of it. It was a hit in our house but not a chess pie.

Mexican Cornbread I
Good basic recipe but needed a bit of tweaking. I added drained whole kernel corn and 1/2 c. milk to compensate, I also added 1 c. pepper jack cheese, 1 c. taco cheese, and 1 c. sharp cheddar. I also threw in a jalapeno with the green chiles. I served it that night with carne asada with lime and refried beans, and spicy spanish rice. It was out of this world. I did only give it 3 stars because I had to tweak the recipe to give it more kick.
