Orange Banana Smoothie

Banana Nut Muffins

I was a bit disappointed with this recipe. The batter was very dry so I added a 1/4 cup of milk. The flavor was there BUT it lacked moisture. This is the first muffin recipe I've come across that doesn't have liquid (milk) in it. Three tbsp vegetable oil is definitely not enough.

Blueberry Muffins I

The key to these muffins is definitely NOT to overmix. The texture was very good. It wasn't very sweet, which I enjoyed, because I'm counting calories. It was so easy to make - my 10 year old daughter whipped up a batch this evening which we all enjoyed. Will definitely make them again.

Lentil Soup

This soup was so good! I was looking for a a low calorie soup because I'm watching my weight and came across this one. Very easy to make. I only used 1 cup of lentils (thought I had more in my pantry) and the soup still thickened. I substituted dried thyme for the basil and oregano, and omitted the spinach and it turned out great. I served it with garlic bread my husband enjoyed it.

Creamy Butternut Squash With Cinnamon Soup

This was my first attempt at butternut squash soup and it was absolutely delicious. I used one 8oz package of cream cheese and one cup of milk instead of 1 1/2 cups of half and half. It was very creamy. Will definitely be making this recipe again and again.
