Best Brownies

VERY easy to make. Mine came out a touch eggy, and a touch too sweet, so not a perfect brownie for me. Still, the pan was gobbled up very quickly - a not-perfect brownie is still good! UPDATED: Changed things slightly and the result is 4 stars. 1/2 cup cocoa and not quite a full cup of sugar, and I baked a little longer which removed the egginess of my first gooey slightly underdone batch. As others said, if you want cakiness then stir, if you want denseness then fold until just barely is a batter. Simple, easy, and a great base - add extracts for flavor (I added 1/4 t raspberry) or nuts, marshmallows, etc.

Slow Cooker Guisado Verde

Excellent! Based on comments, I made an even easier version. Meat, broth, and a very large can of salsa verde. The results were fantastic and this is now a staple in our house.

Chocolate Bourbon Pecan Pie

This was very easy to make and the results were fantastic. In fact, I'm making another right now because the first did not last! For the second pie, I'm going to omit the chocolate completely, and in future versions I think I will reduce it by 1/2 so that the chocolate does not overpower the pecan. You will need a deep dish pie crust for this amount of filling. Even the deepest store bought are still a touch too shallow. I have some ceramic pie dishes designed for big apple pies, and those easily take all the filling. Still, even with a store bought, not that much is wasted. Don't worry about the amount, just make this pie!

Fast Chicken Soup Base

Great as is, but excellent with a few tweaks. I only use 1 large onion (but my onions are huge). I add half of it (in big chunks) along with the chicken bones. Also with the bones I add 2 carrots and 2 ribs celery, also in chunks. All of that gets strained and thrown out with the bones. I cook that at a low boil for about 90 min, and it adds a lot more flavor. My family loves this soup, especially with egg noodles.
