Zesty Chicken Tortilla Soup

For crockpot option: put frozen chicken breast season with preferred seasonings. Put garlic, onion, chiles, tomatoes, cilantro, chicken broth in blender. Pour over chicken and cook on low for 5-6 hours. 30 mins before serving put cornstarch/water mixture to thicken and add black beans and corn.

Amazing Italian Lemon Butter Chicken

I made this for dinner last night and it was amazing. I try not to change the original recipe but my family refuse to eat capers and artichokes so I substituted frozen peas that I steamed in the microwave. I always marinate my chicken and I cut the chicken into strips before marinating. The chicken absorbs the delicious sauce brilliantly. I also used real bacon crumbles that I lightly cooked with olive oil along with the steamed peas to save time.

Strawberry Coffee Cake

This was a very delicious recipe for our weekend breakfast! I was teaching my son how to bake and was really excited of how good it turned out. We didn't change anything except maybe added a little more strawberries!

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

These came out perfect! I would suggest dropping the eggs in the boiling water with a slotted spoon to avoid cracking in which I learned the hard way. I always overcook my hard boiled eggs and these came out with a perfectly cooked yolk and were easy to peel.

Tater Tot Bake

This is such a fast and easy recipe that is delicious! For my very picky family this wins them over every time I make it. I didn't use a whole onion and added garlic. I would put a little bit of salt when cooking the beef and then season it after everything is done. I used a local season salt that added the perfect touch to it.

Marshmallow Fondant

Great recipe that tastes great without paying for overpriced pre made fondant. I didn't have a kitchen aid so I made this by hand. It was a pretty messy situation but worth it. Just make sure to completely grease (I used shortening) the clean counter and your hands before putting touching the mixture, otherwise it gets crazy sticky. I colored the fondant right after I melted the marshmallows and before I added the sugar. Make sure you put a pile of the sugar on the counter before putting the mixture on it. It felt like I was kneading forever before it started to harden but after adding more con. sugar it finally got to the right consistency. I made it a few days before topping the cake. It hardens a little in the refrigerator also. I just nuked it for ten seconds. Make sure before you roll the fondant out that the counter is completely clean of all debris and has confectioner sugar on the entire area that you are rolling it out on. I didn't and caused a few tears when trying to get it off the counter. I would suggest watching a You Tube tutorial if you've never made it before!

Baked Pork Chops I

This is our go to recipe for baking pork chops. My family hates cream of mushroom soup but they couldn't tell. They always love this recipe when I make it. I serve it over rice. Make sure to fry them until they are extra crispy. I used panko crumbs mixed with italian breadcrumbs for crunchier texture. I added a little cornstarch to the sauce to thicken the gravy. The pork chops come out semi crispy on the outside and tender on the inside. I also changed the initial cooking time to 40 mins. Don't forget to salt and pepper to taste after you plate them.

World's Best Lasagna

Amazing lasagna recipe! My husband doesn't care much for lasagna and devoured this one. I left out the fennel seeds because I didn't have any. The other small changes were I used the oven ready lasagna noodles to save on cooking time and used shredded cheese. Slices are better though! Delicious!

Sweet and Spicy Pecans

I love these pecans! It was pretty hard to stop picking at them. I put them in a salad with feta cheese, strawberries, mandarin slices, and balsamic vinaigrette. I accidentally put my first batch on wax paper and I couldn't get them off so make sure to use parchment!

Amy's Cilantro Cream Sauce

I've been looking for a good creamy green sauce for home and this is definitely a keeper! It's a perfect versatile sauce that I use for all my mexican food. I didn't have celery salt on hand so that is the only change I made to the recipe.

Ronaldo's Beef Carnitas

This recipe is incredibly easy and delicious! It's sort of like mexican pot roast that just melts in your mouth. the only changes I made is that I used only 2.5 lbs of chuck roast and kept everything exactly as is. I put salt on each individual taco that sets off all the flavors. Yummo!

Perfect Sushi Rice

I used this recipe for making sushi for the first time and it was pretty delicious! I tried to make it exactly like the recipe but I did lower the amount of vinegar. For my personal preference I would add even less vinegar. Overall this is a great go to recipe!

This was a delicious recipes for cheese lovers! I used Boursin cheese spread since it was on sale and panko bread crumbs for a crunchier texture. I also marinated the chicken using McCormick's garlic and wine packet.

Mini Cheesecakes

Great recipe! It was quick, easy, and versatile! I used muffin tins half with the vanilla wafers with a little melted butter and the other half with crushed oreos with butter. I topped with either fresh blueberries and strawberries or hot fudge syrup with mini chocolate chips. I definitely recommend putting the muffin tin a cookie sheet with water to prevent cracking! Everybody thought I was a professional!

Easy OREO Truffles

Simply delicious! This was definitely the hit dessert for Easter! I used melted white chocolate chips to coat them and drizzled them with melted semi sweet chips in a ziploc bag with the tip cut off. I did however have trouble with the mixture starting to become undone, so make sure it's properly rolled and refrigerated for longer than an hour. Also with the white chocolate I added a tbs of vegetable oil to thin it and make it easier for dipping. Toothpicks helped a lot! Definitely give it a try the mixture is so delicious I could even eat it by itself!
