Spanakopita (Greek Spinach Pie)

Reviewed: Aug. 7, 2014
This was pretty good. The filling is off though - I pressed the water out of the spinach but not enough - I will work harder on it next time. It was missing something - dill or maybe a little mint...lemon zest - it needs to be perked up. Oh and definitely salt/pepper.

To Die For Blueberry Muffins

Reviewed: Jun. 26, 2014
Aptly named, they are soooo good! I added an extra 1/2 cup blueberries and skipped the crumb topping. It made 10 good sized muffins. As i'm writing this i'm thinking about making another batch tomorrow. TY Colleen!

Judy's Strawberry Pretzel Salad

Reviewed: Dec. 11, 2013
This wasn't too bad. I didn't like the pretzel bottom, and it seemed too sweet overall. I think a graham crust would have been better. Still it's an interesting and easy recipe - worth tinkering with a bit.

Bohemian Pork Roast

Reviewed: Dec. 11, 2013
I followed the directions up through the part where it browned the meat in a pan. Then I put the roast in my slow cooker. I deglazed the pan with 1/2c Killian's Irish Red -dumped it in with the roast and caraway seeds and I cooked it for 6hrs on low. Truly wonderful, simple recipe - thanks for sharing.

Portuguese Cod Fish Casserole

Reviewed: Oct. 17, 2013
I didn't have salted cod, just fresh cod. It would have been good I think if there wasn't so much oil and I had added salt to it - but as i'm trying to watch my sodium ...this didn't work for me. Im giving it 4 stars because I think if i'd added salt, it would have rated that but even if I had it was too much oil...

Apple Turnovers

Reviewed: Oct. 5, 2013
Wow, these ARE better than the bakery! I didn't do it exactly as directed b/c im a bit lazy. Skipped the lemon water soak - just squeezed a little lemon on the apples for flavor. Also used honey crisp apples, and added a dash of nutmeg. Really easy and good thank you for the recipe!

Oklahoma Brisket

Reviewed: Sep. 27, 2013
This was delicious! I didn't make the sauce but the recipe for cooking the brisket was spot on. Very tender and the honey soy (which I was a bit skeptical of, I admit) was dynamite. Thanks for sharing such a great recipe.

Double Quick Dinner Rolls

Reviewed: Sep. 22, 2013
Awesome for as easy as it was. I didn't have anything except olive oil, so that's what I used, then decided that I might as well make it more Italian by going with garlic/ital. seasoning in place of the onion powder.

Homemade Deviled Ham Spread

Reviewed: Jun. 8, 2013
Oh my this was good! I made a double batch, might need a bit more mayo and mustard bc it seemed a bit dry. Changed celery salt to celery seed and scaled it back a tad based on comments made by others in re the salt. Otherwise no changes, thanks for the awesome recipe, I'm keeping this as my permanent one for all time :)

Taco Casserole

Reviewed: Dec. 21, 2012
Its a good recipe, because it's quick and filling. After making it a couple times I decided I needed to change the diced tomatoes out for a can of rotel - to give it some more zip. Other than that its a great go to when im short on time and want some comfort food. Thanks!
