Garbanzo Bean Chocolate Cake (Gluten Free!)
Really great cake. I have a couple friends with gluten allergies and wanted to make them birthday cakes but not spend a fortune on the crazy flour alternatives. This cake got rave responses from everyone who ate it. However I've made this cake twice and BOTH times its stuck to the pan and broken apart! I took the advice from previous posters about using cocoa powder and this does NOT work well. I made sure to really coat the pan the second time and it still fell apart :(. cake was still tasty--I suggest throwing in some chocolate chips to make it even more chocolaty

Pumpkin Apple Streusel Muffins
I brought these to work (at a physical therapy clinic where everyone tries to eat healthy) and they were all gone before noon! Being a critical baker I think if I made these again I'd add more spice-I love spices!- and only bake for 30 minutes. I did my first tray for 35 and thought they were a tad overdone.

Chewy Coconut Cookies
There is either something wrong with this recipe, my oven or both. I made these once and they were super flat and soggy. they tasted good though so I read the reviews and saw that old baking soda could be the cause. I went out and bought fresh baking soda only to have the same result :(. These cookies TASTE great but I only bake to share and these cookies are NOT presentable..
