Delicious Ham and Potato Soup

Excellent soup! I used chicken broth instead of water, used red potatoes and didn't peel them, sautéed garlic along with the onions, and added a little dry sherry, parsley and cheddar to the cream sauce. Very filling and delicious!

Orange-Ginger Sweet Potato Casserole

Like others, I'm amazed there aren't more reviews! This is excellent, classy, and easy to make. I make it in advance and then just bake it for 45" or so before serving. I used one egg, no milk, a little more orange juice, about double the amount of ginger and added some pecans on the top. I also just mashed the sweet potatoes...forget the baking, cooling, peeling routine.

Unbelievable Chicken

This is excellent. Poked holes in the chicken with a fork...marinated overnight in a plastic bag...barbecued the next evening...and it was absolutely delicious. The best chicken I've had...or made.

Refreshing Summer Orzo Salad

Great salad! I added half a cup of wild rice (cooked). No butter, no capers, no extra olive oil (except for a tiny bit to sauté the garlic). Added sun dried tomatoes, A LOT of spinach, roasted the pine nuts in the oven, kalamati olives, lemon and Girard's Greek salad dressing. Cooked the Orzo in chicken broth as recommended and it was fine. Not too salty. Added the pepper flakes. Waited to add Feta until salad was completely cooled. Really excellent!

Gazpacho

Good, but a little salsa-y. I added 2 more tomatoes, much less tomato juice (about 6 tbsp V-8), much more garlic, more lemon juice, olive oil and 2 slices of crusty bread. Thoroughly blended and chilled overnight. This gives a different texture (thicker) and I think, excellent.

Spanakopita (Greek Spinach Pie)

Libby's® Pumpkin Cranberry Bread

Wonderful! I made these as muffins (makes 24 LARGE muffins), added walnuts, doubled the cranberries (which I put in whole), used squeezed orange juice and the zest of 2 oranges, and 1/2 c. applesauce and 1/2 c. oil. Muffins are moist and delicious!
