Creamy Au Gratin Potatoes

I love this recipe! I use this cheese sauce for everything now! When I used it for mac and cheese, I especially noticed that the sauce was kind of grainy. After mentioning it to a few people, I was informed that it was because I used the bags of already shredded cheese (they are covered with a powdery substance). While it's not as noticeable in this recipe, I did dig out my cheese grater. I am all about short-cuts though, so I did still use the frozen sliced potatoes and frozen chopped onions. It cuts the prep and baking time by a lot! I also like to take off the foil for the last 10 minutes of baking, add more cheese and crumbled bacon.

Baked Zucchini Chips

These were delicious! I made as is. They weren't super crisp, but still great. Next time I might try slicing them thinner. Thanks for the delicious recipe!

Buffalo Wontons

I really can't say enough good things about these! I would eat them all the time, if they weren't so bad for me. Why does something that tastes so good have to be so bad for you? I used a little less butter, but I have tried baking wontons before and they are just not that good. I didn't read the directions very carefully and completely skipped over the part about letting the sauce rest for an hour, but it seemed to work out just fine. I served with ranch dressing. Amazing! If I could give these more stars, I would! Thanks!

Bacon Roll Ups II

I was skeptical, but these were amazing! I am kind of a snob about how my bacon is cooked (I only like it perfectly crispy or it grosses me out) and these turned out just right! I also worried the bread might be soggy, but that wasn't the case. I was having Mediterranean themed appetizers that night and this didn't fit, but I really wanted to make them anyway so I experimented and discovered I like them with roasted red peppers inside with the cream cheese (kind of a stretch, I know). I tried lots of variations earlier in the day and decided that I didn't like them as much if I added any seasoning because it just distracted from the main flavors. All the variations were still quite good, but none of them beat the plain simple ones--so why make it more complicated? I will make these without any additions from now on! Thanks for the great recipe!

BBQ Bacon Ranch Dip

This was amazing! I halved the recipe because I was serving this to a small crowd (and two packages of cream cheese sounded like a lot), but I wish I hadn't because it went really quickly. The only things I did differently were that I used onion dip instead of ranch and mild cheddar instead of sharp, but that was only because of what I had on hand (I imagine either way would have been great). I also added green onions, but that was also just because I had them on hand (and I love green onions). I also didn't have time to chill for one hour, but honestly I think that might have made it too tough on the chips, plus I am really picky about the crispness of my bacon and I fear that might have made it soggy (for that reason I also put the bacon on the very top). I served with wavy lays and will definitely make this many more times! Thanks for the great recipe!
