Caramelized Onion and Blue Cheese Orzo

I thought this was really good. I'd never used Orzo pasta before, so this was a pretty good introduction. I only used 3 onions and used cream cheese instead of mascarpone, but it had really good flavor. I seems like most people use this as a side dish, but we ate it as the main entree, with a small side salad and some garlic toast and it was very filling. Definitely worth a try if you are a fan of bleu cheese and caramelized onions.

Pork Tenderloin with Apples

didn't make this pork tenderloin ( I actually used the recipe for Rosemary Roasted Pork Tenderloin from this site) but I made the apple compote to go on top of it and IT WAS FABULOUS! Definitely worth a try!

Orange Glazed Carrots

These are my favorite way to eat carrots now!! So delicious. The only changes I make are to use regular size carrots, cut up, and I add a tsp. of corn starch to the glaze mix to make it thicker and stick to the carrots. These are so easy and definitely worth a try!

Dan's Fallin' Apart Pork Pot Roast with Cracked Pepper Gravy

EXCELLENT!! Didn't make it exactly, left out the red pepper flakes and didn't use the injectable marinade, but it was very tender and the veggies soaked up all the juice and were very peppery, flavorful and well-cooked. I would definitely recommend this recipe. It only took me 15 minutes to prep, cooked for 3 1/4 hours (I had a 2.5 lb roast) and it was just fabulous! 5 stars!

Eggnog Creme Brulee

this was easy and a great way to use up some leftover eggnog and mascarpone cheese I had bought for a holiday dish. It tasted great and came out super creamy. Would definitely recommend!

Blueberry Coffee Cake

This was fabulous! I used brown sugar in the crumble instead of white, but otherwise made it according to the recipe and it was wonderful!! Exactly what I was looking for! Will definitely make again!

Chicken Pot Pie I

for a quick and easy pot pie, this was good. I did bake the bottom crust for 10 minutes before adding everything to make sure it was crusty and added a few extra spices to jazz it up, but other than that, made as is. I typically prefer and more "homemade" pot pie with fresh veggies and a butter/flour roux, but on a busy evening when you need something quick and hearty, this was great!

Chicken Enchiladas II

Ok, you know something that already has 1200 great reviews must be good, but this one is extraordinary!! It's definitely rich, so you can't make it all the time if your watching your weight, but don't skrimp on the ingredients to try making it healthier either--it will take away from the rich flavor. This recipe is certainly worth a few extra calories! I boiled the chicken in chicken broth, cumin and taco seasoning, and then shredded it. It gives it more flavor and a little more authentic feel. Hope you love this recipe like I did!

Hot Crab Dip I

I thought the recipe tasted great and all my friends loved it, but it took a long time to make and was very messy! Trying to whip together all the ingredients after I added the milk meant that I spent awhile wiping milk off my cabinets! But the result was wonderful.
