Whipped Cream Cream Cheese Frosting

This frosting is absolutely delicious! It's a very nice substitute for the traditional cream cheese frosting because it's not as heavy nor as sweet. I followed the directions exactly and the frosting came out perfect. I used it to decorate a double-layer round carrot cake and it worked great. I did not find it to be at all "runny" (as did some other reviewers). Just be sure to beat the whipping cream adequately, and then fold it into the cream cheese mixture gently. My guests loved this frosting and I will definitely make it again.

Mostaccioli with Spinach and Feta

I modified this recipe slighlty so it would be similar to a dish I recently had at an Italian restaurant. I used chopped sundried tomatoes in place of the fresh tomatoes. I used fresh baby spinach that I added at the very end and cooked until the leaves wilted slightly. I also added pine nuts. I used regular feta instead of the flavored feta and I increased the amount of garlic. It was very easy and delicious!

My Best Clam Chowder

Very good. I doubled the amount of clams and omitted the carrots. I also used fat-free half & half which worked quite nicely. The next time I make this, I'll add some bacon or bacon fat to add flavor.

Breaded Chicken Fingers

My family loved this recipe. I used whole chicken tenderloins. I didn't have time to refrigerate the chicken in the buttermilk mixture, but it still seemed to work quite well. My kids (and husband) requested that I make these again "very soon."

Rise 'n Shine Juice

Very simple and very good. I served this to a group of girls for a brunch and it was a hit. I used orangepineapple juice with inexpensive champagne. I also added some marachino cherries with some cherry juice and served it in a colorful glass pitcher. (The cherries will sink to the bottom of the pitcher.)

Hashbrown Casserole

Delicious! My company loved this recipe. I used a combination of both cream of chicken and cream of mushroom soup. I also substituted 2 tablespoons of very finely minced sweet onion instead of the dried onion. I also added a little bit of bacon fat (very fattening, but so good!) and sprinkled the crumbled bacon on top with the corn flakes.

Sweet and Sour Zucchini Salad

Very good. As other reviewers suggested, I made it the night before so the flavor would be enhanced. I also used red pepper for color. It's a good (and different way) of using up an abundance of zucchini. I'll make this recipe again.

Old Fashioned Raisin Pie I

I made this pie for my father on Fathers' Day because he said he just loves raisin pie and hasn't had it for soooo long. Well, both he and my husband said the pie was outstanding. It was also easy to make. I served it warm with vanilla ice cream. I discovered, however, that I'm not as much of a raisin pie fan as my father and husband. I will make it again - - for them.

Lettuce with Hot Bacon Dressing

This dressing was great! I made it for Fathers' Day and everyone loved it (including my very picky teen-aged son.) However, I made the dressing in advance and reheated it slightly in the microwave when I was ready to use it. When I poured the dressing on my spinach salad (that was also made in advance and had been refrigerated for a few hours), the dressing cooled down too much and sort of "coagulated" on the spinach (yuk). Next time I will keep my spinach at room temp.

Caesar Salad Supreme

Absolutely delicious! I made this recipe "as is" and my entire family loved it. I didn't think the dressing was too thick - - it coated the lettuce nicely when tossed. As far as the anchovies go, they contribute a lot to the overall flavor and nobody even realized they were in the dressing. I will definately be making this recipe again soon.

Chicken Enchiladas II

I didn't like this recipe as much as I thought I would. I made it exactly the way the recipe instructed, and it just seemed sort of bland to me. My husband and son thought it was okay, but I don't think I'll be making it again.

Roasted Garlic Grilled Vegetables

These vegetables were so good! For color, I used one summer squash and one zuchinni, and I also one red pepper and one green pepper. I made 1 1/2 times the oil and seasoning mix and grilled the veggies on a large piece of aluminum foil for about 15 minutes. My family loved them!

Jay's Signature Pizza Crust

This pizza crust was really good, although I found the dough quite sticky and hard to work with. I pressed the dough onto a cookie sheet and made one large pizza. I was a little worried at first, because after I pressed the dough onto the cookie sheet, it looked rather "flat & lifeless", but the crust raised nicely as I pre-baked it, and it turned out great! Everyone loved it.

Clone of a Cinnabon

These rolls are really good. They're easy to make, but took a little time. The rolls in the middle of the pan were a little gooey -- the next time I make them I'll try spacing them apart on a large cookie sheet so they bake individually & more evenly. Also, I'll cut down on the amount of butter -- way too much guilt! Lastly, I think half of the icing recipe would be enough.
