Salsafied Chicken and Rice
I loved this recipe. I only gave it 4 stars because I did alter the recipe as others suggested. I cooked the cubed chicken in about 2 tbsp of butter (I prefer the flavor over oil - I know not good for you). Then I added a package of fajita seasoning to spice up the chicken in place of the salt and pepper. I only used about half the can of chicken broth and used a whole 16 oz. jar of Pace's chuncky salsa. While all of that was cooking I cooked two boil-in-bag's of rice in the microwave for about 7 minutes. When they were done I added almost all of both bags (maybe about 1 1/2) to the chicken mixture and topped with the cheese. I covered and let sit. This was delicious and easy. One of the first recipes I've found that both my boyfriend and I enjoyed!

The Best Rolled Sugar Cookies
We usually use the premade sugar cookie dough (where you just add an egg and water) - and I never eat them because they are very bland. These cookies changed my opinion of home-made sugar cookies. I took some of the other reviewers advice and added about a 1/2 cup more sugar (could have probably done a whole cup) and doubled the vanilla. I let the dough chill for over 24 hours (we would have used the following day but something came up). It was a little hard but if you working in small sections and kneaded a little it was perfect. I halved the recipe since this was only for my boyfriend and I and we got about 2 dozen cookies out of it (thicker cookies). I will definitley be making these again - they reminded me of the sugar cookies you can get at the mall - not bad not bad!

Home Style Macaroni and Cheese
I thought overall this was great. I used half of all of the ingredients because it was just for me and my boyfriend, but kept the 7 oz. macaroni due to other comments. The taste was delicious - I was nervous about the cream cheese, but it was great. I put it in the oven for 10 minutes to melt the cheese I put on top (I don't care for a bread crumb topping). I probably should have only done 5 minutes, I believe the oven dries it out a bit too much.
