Mocha Bundt Cake

Orange Chicken Stir Fry

Winner Winner Chicken Dinner Added some frozen veggie oriental mix, a bit of onion, ginger, zested a whole orange and it was great. This recipe is a keeper. Didn't bother to lessen the salt because the OJ was so sweet plus I added a lot of veggies and beansprouts so it worked out great without becoming bland. Oh and I used chicken thighs.

Brunch Enchiladas

I looked this recipe up when I had some left over tortillas in the fridge. Didn't have cooked ham but I had some frozen sausage that I just cooked and chopped up. I will definitely be making this again next time we have a potluck brunch for Mothers' day.

Amy's Cilantro Cream Sauce

I love Cilantro so this was a big hit with me. My DH said there was too much Cilantro so I guess you can judge how to measure 1 bunch fresh cilantro proportionate to your love of cilantro. I made fresh Tomatillo Salsa Verde with the recipe of that exact name on this site. Shout out to Dale for the fresh Tomatillos from her garden. Other sub was lemon for lime. I ate this with chips, breaded chicken breasts and some pan fried potato slices when I ran out of anything else to eat it with. Yes it was that good.

Slow Cooker Cranberry Pork

4 stars only because I didn't make it in a slowcooker. I was in a hurry to make dinner and really wanted to see what this cranberry/french dressing mystery tasted like. I used 6 boneless pork chops. Seasoned with s&p and browned in pan. Then added the onions, cranberry and dressing. Also took a reviewers tip on some corn starch in OJ to thicken the sauce. I let it come to a boil and simmer for a an 1.5 hrs. Was even better the next day when I warmed it up in the pan. It's a sweet festive taste. Like when you have turkey, mash potatoes, gravy and cranberry sauce all together. That type taste. I enjoyed it.

Rich Chocolate Frosting

Really good icing. Just don't serve your cake right out of the fridge or the icing will be hard. I personally don't like the icing in between the slabs of cake to be hard as though I put chocolate bars in the cake. At room temperature this icing is creamy and delicious. Use it on the one bowl chocolate cake III and the cake will be done so fast you will not have the need to put it in the fridge. Loved it!

Roast Chicken with Rosemary

This is a great alternative to my usual butter and poultry seasoning massaged roast chicken. It has healthier taste using olive oil instead of butter. I also add cloves of garlic in the cavity but I haven't tried it with lemons like other reviews mention. Tastes great - I've made it twice already.

One Bowl Chocolate Cake III

LOVE LOVE LOVE IT! It was a hit with the family and I plan to make it again for Christmas. I did up the coco because I do like my cake chocolaty and moist. Yum.

Greek-Style Rib Eye Steaks

I normally just rub my steak with olive oil and Montreal steak seasoning. Last night I wanted to try something else so I picked this one. I was afraid that it would be too much seasoning but it wasn't. My husband and I loved it. It was quick and easy. I rubbed the steaks with olive oil then the seasoning. Grilled them on a wrought iron grill pan. Topped it with fried mushrooms and feta instead of olives. I then wanted so "au jus" so I poured some red wine into the pan, let it reduce a but then poured all that goodness over the steak and roasted potatoes I prepared as a side. DEEELICIOUS!

Artichoke Dip I

Can't complain at all. I made sure I bought the artichoke hearts canned in water. I chopped them up so that I wouldn't have chunks of artichokes in my dip and I used light mayonnaise as well. It's good to read through the reviews to get all the tips. This recipe is so good that next time I will add something else to it to make a lobster artichoke dip like that at Red Lobster or a spinach artichoke dip like the one at Milestones. It's a nice thick restaurant quality dip. Loved it.

Creamy Caramel Flan

Exactly what I expected. I was a little nervous about flipping it over after reading some of the reviews but mine came out perfect. I just followed the directions as they are. It's like a Leche Flan but thicker but not as thick as cheesecake. I'm not a big cheesecake fan so I was a bit nervous it would be too heavy but it's not. It's just right. I will definitely make this again.

Sam's Famous Carrot Cake

I doubled this recipe and made it into approx. 30 muffins. Baked them for about 20-25 minutes. I've wrapped them individually for breakfast to go and froze some as well. Delicious when toasted and buttered. I substituted the raisins with chopped up dried apricots and left out the coconut hence increasing the shredded carrots to replace the coconut. Oh! I also didn't have buttermilk so I did what SCOTCHGIRL mentions in her review about regular milk and some lemon.

Authentic Enchiladas Verdes

I haven't had Enchilada Verde ever before so that is why it's getting 4 stars. I had to use canned whole tomatillos and jalapeno peppers instead of the fresh tomatillos and serrano peppers. I even had to substitute the queso fresco with a light feta. Despite the substitutions everyone enjoyed the enchiladas and I would say they were a hit. No one noticed it was light Feta on top. You just have to like spicy food to like this one. If I make this again I may take the advice of another review where they added the peppers gradually into the blender - I just went ahead and put 5 peppers into it. Can't wait to try this one again if I find fresh tomatillos at the market one day, I'm sure it will taste even better.
