Oven Brown Rice

Reviewed: Sep. 19, 2012
We love this way of cooking brown rice! I have done it with all chicken broth or all beef broth or a mix. I even have made it with the 22.5 oz hot water mixed with a packet of dry onion soup mix when I was out of broth base. You can even create a one dish meal out f this! Saute up some chopped carrots, onions and green pepper in olive oil. Then add it along with leftover shredded chicken to the casserole and bake according to orginal directions. When its done add some shredded cheddar and pop it back in the oven to melt. We did this tonight and it was YUMMY! I love this recipe! Thanks so much. =)

Chewy Granola Bars

Reviewed: Sep. 12, 2012
This is my first attempt at making granola bars. I did not have any butter so I left it out. I used 2/3 c creamy natural peanut butter instead. I also used about 1/3 cup unsweetened applesauce. Used only 1 cup of chocolate chips. This would be better with mini chocolate chips! Oh, and I could not get this to mix with a utensil. I had to use my hands! LOL Thanks for the recipe. =)

Thai Red Chicken Curry

Reviewed: Jul. 26, 2012
We loved this! I will say that we put in 2 T of red curry paste and a couple of spoons of peanut butter and it was pretty spicy for the kids. Now I on the other hand coulda handled some more heat! We also added a dash of fish sauce. Left out the cornstarch all together. Used green peppers instead of red and didn't have any zucchini, so left that out too. I will definately be making this often!

Curried Coconut Chicken

Reviewed: Jan. 18, 2012
Very good! I put in about 3 TBL curry powder and will try 4 next time. Also, I did make a butter and flour rue to mix in at the end to thicken it up. Definately needs to be served over a good rice, like basmati.

Quick and Almost-Professional Buttercream Icing

Reviewed: Apr. 12, 2011
It was amazing! I will never buy canned frosting again!! I made this frosting to decorate a cupcake cake in the shape og a 1 for my daughter's first bday. I needed 3 batches! But I think 2 would be plenty if I were just frosting 48 cupcakes, and not having to fill in the spaces between the cupcakes to make my shape. TRY IT!!!! YOU WILL NOT BE DISAPPOINTED! I got so many rave reviews on this.

Taco Seasoning I

Reviewed: Apr. 4, 2011
I thought this was great! I used this recipe, with a little less chili powder-1 1/2 tsp-bc I ran out. But it was still great. I added a can of fire roasted diced tomatoes with garlic and a can of red beans, rinsed and drained, to a pound of browned hamburger. Mmmm! Thankss for sharing!

Slow Cooker Sweet Chicken Chili

Reviewed: Jan. 6, 2011
This was okay. Just my preference I guess, but I didnt really care for it. Neither did hubby. Maybe if I could have had it with tortilla chips or rice I would have liked it better. We served it over cornbread as another reviewer suggested. Probably wont make this again.

Easiest Oven Baked Chicken

Reviewed: Jan. 4, 2011
This was pretty darn good. The outside taste so yummy, like fried chicken! The cook time was a little too much, my chicken was a bit dry. I suggest 45 min. Also, seasoned up the crackers quite a bit. Salt, pepper, garlic powder, Tastefully Simple's seasoning salt, and paprika.

Slow-Cooked Tamale Casserole

Reviewed: Dec. 28, 2010
This was very easy and good. It was missing something though, needed a bit more flavor, maybe taco seasoning would do the trick. I will be making this again!

Chocolate Pecan Pie I

Reviewed: Dec. 28, 2010
The taste was yummy. However, I followed recipe exactly and it overflowed while baking. Thank goodness it was on a cookie sheet, b/c it was alot of overflow. Also, the top got a little over done and I didn't even bake as long as reccomended. This pie is fabulous with vanilla ice cream!

Very easy and good. I just used cheddar cheese and we were out of half and half so I used milk. It turned out good.

This was good and it made a whole lot of food! I still prefer ham and bean soup though over this bake.

Allana's Excellent Potato Soup

Reviewed: Dec. 24, 2010
This is a good recipe. One thing it was missing is carrots. I will add them in next time. Also, I didn't care too much for the ham, I think next time I will saute smoked sausage in place of the ham. Hubby said it needs bacon too!

Loose Meat on a Bun, Restaurant Style

Reviewed: Dec. 24, 2010
These were pretty good. It took longer than stated for the liquid to reduce down, about an extra 45 min. or so. We served these with mustard on bakery fresh dinner rolls. Yummy!

Tomato Curry Chicken

Reviewed: Dec. 18, 2010
This was pretty good. All the leftovers got eaten up. One thing, I followed the recipe except my chicken breasts were frozen, and the meat was dry. My chicken often comes out dry, what am I doing wrong?? I did cover with foil too. We served this with peas and fried potatoes with green peppers and it went well together.

Easy Skillet Ravioli

Reviewed: Dec. 18, 2010
Good idea to add the heavy cream to the sauce, but way too watery when cooked as recipe says. I will do this again, but I will just boil the ravioli, and warm the sauce and cream in a saucepan. Sorry...two pans were neccessary for this one.

Buffalo Chicken Dip

Reviewed: Dec. 18, 2010
It was good, but too cream cheesy. Not enough buffalo wing flavor. I would make this again but with only 1 package of cream cheese and maybe try it with blue cheese.

Waikiki Meatballs

Reviewed: Dec. 14, 2010
I was disappointed with this...it looked so good. I probably messed something up when makng it, b/c my meatballs all fell apart in the skillet so it was a crumbly beef mixture. My hubby thought it was edible, but I did not.;o)
