Salmon with Dill

Delicious, quick and easy. I marinated my salmon steaks in fresh lemon juice as well, to remove that fishy smell. Instead of onion powder, I diced up a 1/4 of an onion and sauteed it in the 2 tablespoons of butter, add in the dill, too! In the meantime, I salted both sides of the fish and added lemon pepper, too! I drizzled the butter/onion dill mixture over the fish and popped them in the oven for 10 minutes, then broil for 5 to brown the onions on top. YUMM! I have made this two Fridays in a row! LOL

Hot Artichoke and Spinach Dip II

I have been making my own stock version of hot spinach and artichoke dip over the last ten years and decided to try something new! I am so glad I did! This was fantastic! I think it's the blend of different cheeses that makes it so tasty. I cheated, I used the "Italian Cheese" which is a blend of 6 cheeses, Asiago, Parmesan, Romano, Fontina, low moisture Mozzarella and Provalone. It made it so much easier to make and added the different shades of flavors to the dip. I also mixed in the regular Mozzarella and on a whim, added a little extra to the top for appearance. I added an extra clove of garlic because I am all about garlic. I was a little leary of the basil but it added a nice flavor to it! Throw out your usual recipe for today and try this one, you will not be sorry!

Ham Salad Spread

This was awesome! We had an 8 lb ham for Christmas and ham sandwiches were getting old LOL! We stuck to the ingredients in the recipe, but we doubled everything from the mayonnaise to the celery and egg! We kept it to 3 cups of ham and we chopped it up in several batches in the food processor. It's the egg that truly makes it and I was surprised it didn't need any salt or pepper to taste! What a great way to stretch your ham in these tough economic times! Thanks for the recipe Marcella, this is a keeper!

My Best Clam Chowder

Wow! this is "My Best Clam Chowder!" I took a hint from the other reviews, although I kind of winged it from the beginning. I had a pound of frozen clams in the shell and steamed them in 1/4 tablespoon of butter and 1 teaspoon of minced garlic. After making sure they were coated,I added 1/4 cup of white wine, covered and steamed for 4 minutes till they opened. I drained the juice and added the juice from one 10.5 ounce can of minced clams. Thinking I didn't have enough clam broth, I added 1 1/2 cup of chicken broth to both the drained clam juice and buttery/garlic wine clam juice. I then fried 3 strips of bacon, removed from pan then added the veggies with the clam broth. Yes, I sauteed the veggies in the bacon grease, fattening but soooo tasty! (then added the clam broth as instructed) After whisking the butter, flour and cream mixture, I added all the veggies and clam broth. I crumbled the bacon and added both the minced and steamed clams, salt and pepper to taste then the red wine vinegar. This was in one word, FANTASTIC! It wasn't that hard nor expensive, this is a definite keeper!! Thanks!

Black-Eyed Peas Spicy Style

I took hints from other reviews and added 3 slices of bacon. I had soaked my black eyed peas over night and added 2 cups of chicken broth to the mixture. I also added 1 teaspoon of fresh chopped jalapeno and generous amounts of black pepper. I boiled for 5 minutes, then reduced heat for the remaining 25 minutes covered. This is delicious, not the original recipe, but very tasty!

Jamaican Beans and Rice Dish

I have to say that I followed debP's review. I, too, cooked the rice beforehand, but while cooking it, I also sauteed pork, green onions and 3 cloves of garlic. When the pork dish and rice were done, I transferred the pork/green onion mixture into a big pot and added the whole can of coconut milk. Then I added generous dashes of dried thyme, salt and pepper as well as crushed red pepper flakes. Added the brown rice as well as 1/2 cup of black eyed peas that I pre cooked a couple hours before. There was no "drying out" of the rice, was liberal w/the water that I cooked the brown rice, after reading all the scarey previous reviews! In the end, I prepared the dish nothing like the actual recipe, but it turned out fantastic. There were hardly any leftovers! This is a good "idea" of a recipe, but there is some major tweaking that has to be done in order for it to turn out with a consistency that is edible! Good luck!

Easy and Delicious Chicken and Rice Casserole

This is a very good base for casserole. I cut the chicken into bite size pieces and laid them on top of the uncooked rice. I then sauteed one tablespoon of butter with one clove of garlic with two stalks of finely chopped celery and sliced mushrooms. I wanted to incorporate more vegetables so I added chopped fresh broccoli on with the chicken then added the sauteed celery, mushroom garlic mixture. I also mixed the soup, water and half the dried onion soup mix. Baked for one hour covered, then took out of the oven and topped with a mixture of cheddar and mozzarella and baked for an additional 15 minutes. Fragrant, delicious, and with a little more effort, this is a delicious dish that will please almost everyone!

Famous Japanese Restaurant-Style Salad Dressing

This was very close to the salad dressing we used to serve in a Japanese restaurant I used to work at. I didn't have peanut oil, but instead used sesame oil. With that exception, I followed the recipe to the T. Very delicious, easy to make and fresh ginger, I think, is the key. Next time I will follow someone else's suggestion of added chopped carrots! My husband absolutely loved it, so I will give it 4 stars!

Garlic Dill New Potatoes

Easy and delicious, these are a winner! No worries if you don't have fresh dill on hand, I used dried dill and it was still wonderful! This will be a staple in my recipe box for a quick and simple way to prepare new potatoes!

Grilled Portobello Mushrooms

These are fantastically easy to make and even better to eat! I stick to the recipe and grill these to perfection. I have made them several times and they never disappoint! Sometimes if we have leftovers, we dice them up and put on top of pizza!

Feta Cheese Ball

WOW! this was fantastic! I served this at our Labor day party and it went so FAST! Instead of using 4 ounces of feta, I used 6, added an extra clove of garlic and for presentation, rolled it in sliced almonds. I served it with bagel chips and everyone RAVED! super easy, inexpensive, sure to please, this will become a staple for all my parties!

Ginger Dipping Sauce

OK, so we didn't have the blender to properly mix everything, but the flavors of the ginger, garlic, soy sauce and sugar are fantastic! We used the sauce in conjuction with the Chicken Katsu from this site, absolutely amazing! I could see using this sauce w/pot stickers, dumplings, anything that requires a soy based sauce. Fantastic!

Chicken Katsu

This was fantastic! I only had 3 chicken breasts, so I decided to make them into chicken strips. I didn't veer from the original recipe, but I found I needed more egg, flour and panko to properly coat the chicken. Amazing! It is so crispy, tender and juicy, my husband and I simply adored it, we served it w/the Ginger Dipping Sauce from this site and it was absolutely wonderful. Best "Fried Chicken" Ever!!!

Florentine Artichoke Dip

This was pretty amazing. On a Sunday afternoon I decided to make this on a whim. I didn't have all the ingredients on hand, so the review I am giving is off kilter. I only had one block of low fat cream cheese, used olive oil infused reduced fat mayonnaise, and a blend of parmesan, romano and mozzarella cheese. I also used marinated artichokes and very well drained frozen spinach. I also added shrimp and an extra clove of garlic. This was delicious! I love the lemon juice, it's tangy and goes well with the garlic. The shrimp was a last minute idea and I was so glad I put them in there. YUM! This is a solid base with many possibilities! Enjoy!

Luscious Slush Punch

This was so delicious! I made it for our housewarming party and everyone raved about it! This is a great alternative to regular soda, not to mention refreshing on a hot summer day! I did cut back on the amount of sugar, just used half a cup and it's plenty sweet. Besides, with the lemon lime soda, strawberry jello, pineapple and orange juice, I prefer more of a tart punch. 5 stars!

Balsamic Vinaigrette

Fantastic!!! First of all, I scaled this for two salads. I served it over a simple blend of romaine lettuce, roma tomatoes, hard boiled egg, red onion and Danish bleu cheese crumbles. I added a dash more chopped garlic, otherwise, I made it to scale. Tart, tangey and delicious, this goes a long way! I highly recommend this recipe and this will be a keeper in my recipe box, thanks!

Artichoke Chicken

This was excellent with many modifications! I had some leftover grilled portabello mushrooms from this website and diced them up added to the very well drained marinated 7.5 container of artichokes. I,too, used half of sour cream and half of olive oil infused mayonnaise. I also added 2 fat cloves of garlic. No added salt or garlic powder, I figured the parmesan cheese would add plenty of salt. Next time I would probably use real grated parm, I didn't have any on hand,just the shake on type. Other than that, I cooked at 30 minutes, turned off and let it bake in the juices. Delicious, easy, served with butter herbed rice, this is FANTASTIC! Not asthetically pretty, but no worries, it smells delicious while cooking, tastes even better, and super easy clean up!

Hot Bacon Dressing

This was absolutely fantastic! I served it over a spinach salad for Father's Day and every drop was GONE! I added chopped hard boiled egg, gorgonzola cheese and craisins to the salad and it was such a wonderful blend of sweet, tart and tangy! I can't stress how easy it was, I was a bit intimidated when I first started making it, but no worries, it's simple, quick and no fuss! I did read other reviews and cut way back on the sugar, I only used half a cup and 2 tablespoons. Other than that, I didn't alter a thing! This is an excellent way to eat your spinach LOL!

Garlic Prime Rib

We used a smaller cut of prime rib, 3 and a 1/2 pounds, my husband made this and he suggests to take your time with this. Cooking time, reduce accordingly. This was absolutely DIVINE! We reduced the cooking time to 15 minutes for medium rare, the only way to have prime rib. This is a definite keeper! We served with the Blue Cheese Potatoes Delmonico and the spices, herbs of both dishes complimented each other very well. YUM!
