Whole Wheat Zucchini Bread
an even healthier version-- I just made this recipe for the second time and made some serious changes based on what others said. I halved it and used 2 1/2 cups whole wheat pastry flour, used equal amount raw sugar in place of brown sugar, added some nutmeg, ginger powder, allspice, and almond extract on top of the vanilla, and since I didn't have honey added about 2 tablespoons of molasses and a splash of agave syrup for moisture. I also found that creating a zucchini puree is far easier than grating a full 2 cups-- just chop it into smaller pieces and throw it in the blender with about a 1/4 cup of soymilk. It makes the process a lot quicker and keeps the bread moist. added chopped pecans and oatmeal as well... it came out phenomenal. Even my junkfood junky dad and friends couldn't get enough of it.

Veggie Vegetarian Chili
just made this for my sister and her vegetarian boyfriend-- huge hit. I didn't measure anything, just added vegetables/spices to taste. Also added a hefty portion of meatless ground beef, some pickapeppa hotsauce, a can of tomato paste, and a few tablespoons of finely chopped cilantro (which I would DEFINITELY suggest as for a remedy to the something-is-still-missing sensation.) overall, absolutely delicious and easy recipe. Try with the "healthier grandmother's buttermilk cornbread"-- sooooooo good.

Whole Wheat Snickerdoodles II
I added almond extract, 1/2 teaspoon cream of tartar, cinnamon, and a touch of nutmeg to the batter. Also used all whole wheat flour. They came out delicious, a little puffier but still with that chewy feel. Bottom rack burned, but 9 minutes on middle rack seemed to do the trick. Next time I might use a little less sugar because they are so sweet, but otherwise they're delicious... I'd definitely recommend the nutmeg addition for the holidays.
