I live in a nice community in Southern California's Inland Empire. My LifePartner and I love to eat healthy. I am a type 2 diabetic and am always looking for new low carb meals.
My favorite things to cook
I reallly enjoy grilling on my BBQ. Chicken and steak are yummy on the grill. I am working on learning how to cook salmon on the grill, and yet to find new ways to flavor it. Vegitables of all types seem to constantly be moving through our house. Although it is a no-no to eat any potatoes. White rice is no longer welcome, but brown is. And wheat flour has replaced white. I had tried to use whole wheat noodles. But they were too much for my blood sugar, even in a small portion.
My favorite family cooking traditions
One of my favorite family cooking traditions is made every Christmas and 4th of July. It is my Grandma's saladnoodle shrimp salad. I will have to post it later. She was an amazing cook. Grandma was Irish, and was raised in the Little Italy part of town. The meals she prepared were pretty eclectic. Variety was the norm. I especially love my family cooking tacos allot. There was a method to the maddness. And it was well worth it. Will have to post that one too.
My cooking triumphs
I am told I make good scrambled eggs. And of course I have totally perfected my family favorites of tacos, and Grandma's saladnoodle shrimp salad.
But really my biggest triumph is homemade quiche. I can make deep dish quiche in a variety of flavors. I once had to take over in my Stepfathers small restaurant when he was too sick to cook. I was the prep cook. I put my homemade quiche on the menue and the whole town came in and gobbled every one of them up. It was a hit!!!
My cooking tragedies
I tried to remember one of my Grandma's recipies for her spanish rice. I really tried. Somehow the rice would not cook all the way. Ugh...what a disaster.
