Chef John's Meatless Meatballs

If I could rate this on taste alone it would get a 5! These are great and the texture is amazing. I also like the colour mix in it. However these didn't hold together very well for me and I needed to cook them for an extra 5-6 mins in the oven to ensure that they didn't fall apart when I was cooking them in the pasta sauce. Chop everything very finely and add extra breadcrumbs if neeeded.

Shortbread Cookies II

Great! They came out exactly like shortbread, the traditional Scottish type. A little sweet and a little salty everyone in the office enjoyed them and the best thing is I could find all those ingredients here in outback China!

Zucchini Bread with Cinnamon Sugar Topping

Yum! I´m in china and could get all the ingredients bar the zucchini which i substituted for a similar type of marrow and just drained off the extra water. I cooked it in 2 batches the first one burnt a bit even though it was only in there half an hour. The second one i put in for only 25mins and it came out well . I really liked the textured taste .

Jam Muffins

Tasty and easy to make, the only thing I changed was that I added 1 tsp of vanilla essence to the wet ingredients to give the muffins a boost. They cooked really easily and were a real hit with my friends

Holiday Rum Balls

These were great, easy to make and tasted delicious. Again, don't overdo it with the rum as it takes some time to soak in. I made one batch with Coruba and one with Baileys.

French Pastry Pie Crust

Simple and soft this pastry turned out well. We made it with the Perfect Pumpkin Pie and it was delicious. Didn't stick to the pie dish and was easy to cut. We froze the other half of dough for future use. Will use again.

One Bowl Chocolate Cake III

This works pretty well and comes out easily. I did the brewed coffee thing the second time I made it and the flavour was better. Still not amazing but very simple for beginners.

Cinnamon Apple Syrup

This sauce was good and I read the comments about using less cinnamon before I made it. However I think it was too sweet and I only used about 4/5 of the sugar. Next time I will use sweeter apples and less sugar

Chunky Peanut Butter Cookies

Fast, easy to make cookies. If you are using non-American peanut butter I'd suggest not adding any salt as it is usually salty enough (I used Skippy). Plus since I am in China and don't have access to all the ingredients it's fine to leave some out, add some extra in. I added Vanilla essence, about 2tbls cocoa and left out coconut, raisins, and peanuts (I used crunchy PnB instead). Good solid recipe :D

Banana Chip Muffins I

These cooked really well and came out looking nice, however i would add more sugar next time since the 1 tbsp of baking powder made mine a bit bitter. I put chocolate cream cheese icing on top so that sorted that out! Also added cinnamon and vanilla to the batter as suggested by others.

Hot Cross Buns

I made these for Easter last year and got rave reviews even comparing them with store ones (I think these were a lot better!) For the cross I used flour and water with an orange glaze used by just heating a little orange juice, rind and sugar. yum yum
