Jam Muffins

Reviewed: Nov. 6, 2010
Tasty and easy to make, the only thing I changed was that I added 1 tsp of vanilla essence to the wet ingredients to give the muffins a boost. They cooked really easily and were a real hit with my friends

Chunky Peanut Butter Cookies

Reviewed: Apr. 19, 2011
Fast, easy to make cookies. If you are using non-American peanut butter I'd suggest not adding any salt as it is usually salty enough (I used Skippy). Plus since I am in China and don't have access to all the ingredients it's fine to leave some out, add some extra in. I added Vanilla essence, about 2tbls cocoa and left out coconut, raisins, and peanuts (I used crunchy PnB instead). Good solid recipe :D

Shortbread Cookies II

Reviewed: Jul. 9, 2011
Great! They came out exactly like shortbread, the traditional Scottish type. A little sweet and a little salty everyone in the office enjoyed them and the best thing is I could find all those ingredients here in outback China!

Cinnamon Apple Syrup

Reviewed: Oct. 31, 2011
This sauce was good and I read the comments about using less cinnamon before I made it. However I think it was too sweet and I only used about 4/5 of the sugar. Next time I will use sweeter apples and less sugar

These got really good reviews by everone i gave them to. Be sure not to cook them too long because they´ll lose their softness

I really liked these! I put a little tart black current jam in them and thought they were delicious. Not too sweet perfect with a cup of tea.

Zucchini Bread with Cinnamon Sugar Topping

Reviewed: Nov. 23, 2011
Yum! I´m in china and could get all the ingredients bar the zucchini which i substituted for a similar type of marrow and just drained off the extra water. I cooked it in 2 batches the first one burnt a bit even though it was only in there half an hour. The second one i put in for only 25mins and it came out well . I really liked the textured taste .

This was delicious. It took a bit longer than expected to cook and still was a little soggy but very tasty. Surprisingly saucy too.

One Bowl Chocolate Cake III

Reviewed: Jan. 3, 2012
This works pretty well and comes out easily. I did the brewed coffee thing the second time I made it and the flavour was better. Still not amazing but very simple for beginners.

Hot Cross Buns

Reviewed: Jan. 3, 2012
I made these for Easter last year and got rave reviews even comparing them with store ones (I think these were a lot better!) For the cross I used flour and water with an orange glaze used by just heating a little orange juice, rind and sugar. yum yum

Banana Pancakes I

Reviewed: May 24, 2012
These are pretty good. Easy to make and fairly quick to cook. Only issue was that i found that the flavour wasn't so strong. Had to add a lot of condiments and if i was gonna do that i woulda made plain pancakes.

Traditional White Bread

Good. Didn't rise super well though. Not sure if that was an issue with my yeast or what since i proofed it for about 10 mins.

These were quite good, the dough was really easy to work with, they cooked fast and held together well. The flavour was fairly average i think.

Banana Chip Muffins I

Reviewed: Jun. 4, 2012
These cooked really well and came out looking nice, however i would add more sugar next time since the 1 tbsp of baking powder made mine a bit bitter. I put chocolate cream cheese icing on top so that sorted that out! Also added cinnamon and vanilla to the batter as suggested by others.

Cucumber Raita

This was pretty good even though we had to substitute mint with cilantro. Made just half the mixture but was enough as a dip for curry puffs.
