Roasted Butternut Squash Soup with Apples and Bacon

Excellent soup, will make again. Added a leek, only had apple juice... which I think made the soup aliitle too sweet for me but my husband loved it. Next time I will try the apple cider. Was scared about the 2 tsps of curry but went for it and it was great. Instead of the sour cream ( didn't have any) I blended 3 tbsps cream cheese into soup. Very creamy without being over powering. I roasted the squash the night before which really cut down on the prep time for the next day.

Black Magic Cake

Awesome cake! Super easy to make just added 1 tsp on cinnamon and double the vanilla extract. Used the Hard Chocolate Glaze from this site which finished it off perfectly. Took it to my garden club meeting and it was gone in seconds, same thing when I took it to work. Make sure you bring the recipe with you, everyone asks for it. UPDATE: I now add 1/8 tsp of chilli powder as well as 1 tsp. cinnamon...really make a difference.

Chewy Coconut Cookies

Love these cookies, great tasting and last for days if you can hide them from family and friends! I took other reviewers suggestions and toasted the coconut as well as add 1 full tsp of vanilla. After making several batches I puchased coconut extract and add 1/4 tsp....what a huge difference in the taste. For the top of the cookies I either sprinkle sanding sugar before baking or drizzle with melted chocolate when cookies are cool. ( taste like a Mounds bar ) Also made a batch with walnuts, raisins and chocolate chips which were very good. These cookies will be in my Christmas baskets for sure.

Cranberry-Pumpkin Cookies

A real crowd pleaser! Turned out better than I'd hoped they would. Used Craisins each time and changed the spices a little....1/2 tsp. cinnamon and 1/2 tsp. pumpkin pie spice. For a glaze I used another reviewers suggestion of icing sugar, melted butter and orange juice.

Lemon Sugar Tea Cookies

A good cookie, added 1 tsp of vanilla extract as well as 2 tsps. lemon zest. I found if you chill the dough over-night the lemon flavor is much better.

Sam's Famous Carrot Cake

I'm not a carrot cake lover but everytime I make this people go crazy for it! I have a few changes......I toast the coconut and walnuts first. Add the zest of 1 lemon ( have tried orange zest but get a bigger reaction to lemon ). 1/4 tsp. of nutmeg and I split the sugar..... 1 cup brown and 1/2 cup white. I like making mini cupcakes, this recipe makes alot perfect for potluck or meeting. Mini cupcake bake for 13 to 14 minutes.

Granny Kat's Pumpkin Roll

Made this on Halloween for a dinner party, everyone went crazy for it. I add walnuts to the cake as well as vanilla extract, extra cinnamon and nutmeg. Took another reviews suggestion and add orange zest and juice to the filling...really gave it a nice flavor especially when it sits overnight.

Red River Beef Stroganoff

Good, fast dinner that everyone loves. First time I made exact as written....good. Second time I used ground beef, a little wine and cream of mushroom soup as I was out of sour cream..... really good.

Sweet Candied Orange and Lemon Peel

After playing around with this recipe a couple times I found that blanching the peels 3 times for 10 minutes each worked well. I simmered the peels in the sugar syrup for 45 minutes....keep an eye on the pot, so they do not dry out. I'm on the "keeping the pith on" team. These will make a great addition to any Christmas plate. ...UPDATE.... I've found that rolling the peels in Berry Sugar gives them a very professional look and taste. Also air drying them for 24 hours before rolling or dipping gives the best results......UPDATE... for the smaller pieces leftover, I cut up, roll in icing sugar so they do not stick together when stored. I add them to cakes, shortbread, cinnamon buns... just about anything for a great orange flavor. Left over syrup is amazing over cinnamon buns.

Crunchy Peanut Butter Balls

I make these every year for my cookie platters to rave reviews ......I have developed another version that is not as sweet and has a different look inside. 3 cups of peanut butter, 1 1/2 cup marshmallow and 2 cups chocolate wafer cookie crumbs. mix, chill and dip.

Chocolate Mousse

Quick, easy and very tasty. Made this for Valentines day to rave reviews. I doubled the recipe, used Kalhula instead of water and used only 1/2 the sugar....still was plenty sweet. When I combined the whip cream with chocolate I used the mixer to beat together to incorporate air....worked nicely. Served in parfait glasses with chocolate cookie crumbs on bottom and sprinkled on top and a drizzled Kalhula to finish off.

MMMmmm good and so easy to make. I recommend doubling the recipe as they do not last long. Had to bake mine about 8 minutes longer, also sprinkled pecans on the top and they do not need frosting.

Mrs. Sigg's Snickerdoodles

I'm joining the Mrs. Sigg's bandwagon! Like others I used all butter and added 1/2 tsp. cinnamon to the batter for extra flavor. Chilled batter for 1 hour before baking. Took the cookies to work and they disappeared in minutes...... these are my go-to cookies in a pinch to please a crowd.

Upside-Down Coffee Cake

Really good and large enough to feed a crowd...I used an 11 inch springform. I marinated the peaches in 2 tbsp. Bourbon for about 2 hours, adds a whole other dimention to the cake. Also increased the spices, 2 tsp. cinnamon and 1/2 tsp. nutmeg. Added a layer of 1/2 cup chopped, toasted pecans after the peaches went in. I don't like super sweet toppings so for the carmel I just made 1/2 the amount and was perfect for us.

Blueberry Zucchini Bread

Really good. Switched the sugar to 1 cup brown and 1 cup white. Added a few more blueberries that what was called for...wanted to use up what I had. This was a big crowd pleaser.
