Cranberry Pistachio Biscotti

Firstly, I'm not a biscotti lover....saying that I was really surprised with how good these turned out. Followed alot of other reviews suggestions ..... used 2 cups flour, chopped nuts/craisins, added 1/2 tsp cinnamon and orange extract and a full orange's zest, brushed with egg wash, baked at 325 for 30 mins then 275 for 15 mins... placing cookies on wire cooling rack, didn't have to turn them over. Here's where my impatience came in handy! I cut them with a chefs knife as soon as they came out of the oven....worked beautifully, not a cracked cookie in sight. Just held on the loaf with a dish towel to protect my hands. My Dad is on his way over as I type, he's very excited about biscotti. He'll be the real judge, I'll post if there are any objections to these cookies!

Irish Cream Chocolate Cheesecake

Very creamy and tasty. Cheated, used store bought chocolate crusts...this recipe filled 2 crusts. Baked at 350 for approx 40 mins. Mixed Kaluha and Irish Cream together for 1/2 cup total, really had a rich and complex flavor. Decreased the sugar to 1 cup, found the liquor was very sweet. HINT: to prevent the white bloches of cream cheese. Mix one block of cream cheese and then add sifted cocoa powder a little at a time then add more cream cheese till all is well mixed and no white is showing.

Caribbean Zucchini Bread

I found this average tasting but hubby loved it so it's in my rotation now. I will try will all white flour next time to lighten it up.

Chocolate Zucchini Bread

Very good, quick and easy. As much as I love my Kitchen Aid, sometimes it's nice just to mix everything in one bowl! I added 3/4 cup chocolate chips ( can't be too chocolatlity for me ) 1 cup of raisins and 3/4 tsp cinnamon. I'm not a fan of almond extract but hubby loves it so against my better judgment I went ahead and it wasn't so bad....if I was baking just for me I'd double the vanilla and leave out the almond. I do not have 3 loaf pans, so I used 2 and baked the rest in an 8 x 8 pan for approx 35 mins...came out perfect. This recipe is great for mini cupcakes.....makes tons of them, wonderful for a church supper or feeding a big crowd. I baked the mini's for approx 14 mins. UPDATE: I now soak the raisins overnight in a couple tablespoons of Bourbon .... it really ups the flavor factor

Mocha Icing

Quick, easy and tasty. I followed others and did not melt butter, simply added to the hot coffee/cocoa mixture and it blended up like a dream. Not being a coffee drinker I guessed on the strenght, next time I'll make it stronger to boost the flavor. I only used 2 1/2 cups icing sugar as that was sweet enough for me. I made this for "Black Magic Cake" recipe on this site and together they were great and super quick. This is a big crowd pleaser.

Cinnamon Bread I

really good, made in an 8 x 8 pan ( baked for 40 mins ). used 2 tsp. cinnamon in batter ( will try a bit of nutmeg next time ), added chopped walnuts to the topping....just placed on top of bread, next time will either broil till crispier or swirl into batter. Excellent served warm with coffee flavor ice cream.

Turkey and Quinoa Meatloaf

MMMmmmm good, quick and super easy to make. Very light tasting, not heavy like a true meatloaf. Next time I'll double it for leftovers. This would be great with a cranberry glaze. Update: I now double the quinoa, add more veggies, second egg and glaze with a combo of ketcup and garlic teriaky sauce.

Chocolate Chocolate Chip Sour Cream Pound Cake

for me this was a complete waste of ingredients. thick, dense ( not in a good pound cake way ) and tasteless. Needs way more cocoa powder and I think too much butter per egg ratio?

Downeast Maine Pumpkin Bread

Very good, great flavor. Took the advice from fellow reviewers and modified as follows: I used 1 tbsp. of pumpkin pie spice instead of the amount of spices stated in recipe. Also used 1 cup white sugar and 1 cup brown, thought the 3 cups sounded too sweet. Added 1 cup chopped walnuts, 1 cup raisins and 1 tbsp. vanilla extract. Used 2 full cups of pumpkin puree. Baked in a bundt pan ( 10 to 15 cup size ) for approx. 70 mins, middle rack of oven. Excellent heated up served with vanilla ice cream on top.

Blueberry Zucchini Bread

Really good. Switched the sugar to 1 cup brown and 1 cup white. Added a few more blueberries that what was called for...wanted to use up what I had. This was a big crowd pleaser.

Upside-Down Coffee Cake

Really good and large enough to feed a crowd...I used an 11 inch springform. I marinated the peaches in 2 tbsp. Bourbon for about 2 hours, adds a whole other dimention to the cake. Also increased the spices, 2 tsp. cinnamon and 1/2 tsp. nutmeg. Added a layer of 1/2 cup chopped, toasted pecans after the peaches went in. I don't like super sweet toppings so for the carmel I just made 1/2 the amount and was perfect for us.

Mrs. Sigg's Snickerdoodles

I'm joining the Mrs. Sigg's bandwagon! Like others I used all butter and added 1/2 tsp. cinnamon to the batter for extra flavor. Chilled batter for 1 hour before baking. Took the cookies to work and they disappeared in minutes...... these are my go-to cookies in a pinch to please a crowd.

Best Brownies

MMMmmm good and so easy to make. I recommend doubling the recipe as they do not last long. Had to bake mine about 8 minutes longer, also sprinkled pecans on the top and they do not need frosting.

Chocolate Mousse

Quick, easy and very tasty. Made this for Valentines day to rave reviews. I doubled the recipe, used Kalhula instead of water and used only 1/2 the sugar....still was plenty sweet. When I combined the whip cream with chocolate I used the mixer to beat together to incorporate air....worked nicely. Served in parfait glasses with chocolate cookie crumbs on bottom and sprinkled on top and a drizzled Kalhula to finish off.

Crunchy Peanut Butter Balls

I make these every year for my cookie platters to rave reviews ......I have developed another version that is not as sweet and has a different look inside. 3 cups of peanut butter, 1 1/2 cup marshmallow and 2 cups chocolate wafer cookie crumbs. mix, chill and dip.
