I made this for a dinner party. I ended cutting the chicken breast in half, since I had 8 breasts and 12 people coming. I also ended up using equal parts panko, regular bread crumb and Italian breadcrumbs, as that is what I had in the house(2c. each, WAY too much), with double the Parmesan cheese and a pinch of garlic powder. I used regular shredded mozzarella and sliced provolone since it was all I could find and it worked fine. I would suggest to anyone making this to put the basil under the cheese, so that it doesn't shrivel and brown up. And use sweet basil, it's the best kind. Anyhow, this was a big hit and the smell even enticed my vegetarian mother to have some and she can't stop raving about it. Also, my brothers fought over the left overs (they only do that for one other meal), so I know it's good then. Definitely going to be a keeper.
