Chicken and Brussels Sprouts Casserole

I read the reviews on this turning out watery and was determined not to have that ending... so I tossed the brussels sprout halves in olive oil with salt and pepper and roasted them at 400 degrees for about 25 minutes instead of boiling them. I also decreased the milk to 1/2 a cup and added 2 beaten eggs. 1 egg would probably have been enough. The casserole wasn't watery at all.

Raspberry Cake

Can't speak for the frosting, as I haven't made that part - but the cake portion of this recipe is to die for! My husband says it's the best cake he's ever eaten. So moist and yummy. Made it just like thre recipe says, and have made it into cake and cupcakes recently. It's wonderful! It made awesome cupcakes which I stuffed with white chocolate mousse... yum!

Eggplant Casserole

I took lots of suggestions from the comments section... I used a yellow bell pepper, added 16 oz baby portabella mushrooms, used a can of diced tomatoes, and subsituted Italian sausage for the beef. I cooked the sausage with minced garlic, then added the onion, peppers, and tomatoes with Garlic Basil Seasoning. I also used 2 cups mozzarella in the mix. It was delicious! All I'll do differently next time is use a larger can of diced tomatoes.

Fiesta Frittata Casserole

WONDERFUL!!! Great for breakfast, brunch or dinner... did have to bake for an additional 15 minutes. I also used cilantro instead of parsley, just cause that's what I had. I thought it turned out great - didn't even need salt. (Used Homemade Gourmet Maria's Salsa - AWESOME.)

Oatmeal Apple Muffins

Picture was deceiving... there's no way that picture is made with this recipe. The muffins were pretty good - although, dense and a little dry. Wish I'd read all the recommendations for extras before baking. However, even if you follow the recipe to the letter, they taste pretty good, and you can say to yourself, "they definitely taste healthy!"
