Chicken and Brussels Sprouts Casserole
I read the reviews on this turning out watery and was determined not to have that ending... so I tossed the brussels sprout halves in olive oil with salt and pepper and roasted them at 400 degrees for about 25 minutes instead of boiling them. I also decreased the milk to 1/2 a cup and added 2 beaten eggs. 1 egg would probably have been enough. The casserole wasn't watery at all.

Fiesta Frittata Casserole
WONDERFUL!!! Great for breakfast, brunch or dinner... did have to bake for an additional 15 minutes. I also used cilantro instead of parsley, just cause that's what I had. I thought it turned out great - didn't even need salt. (Used Homemade Gourmet Maria's Salsa - AWESOME.)

Oatmeal Apple Muffins
Picture was deceiving... there's no way that picture is made with this recipe. The muffins were pretty good - although, dense and a little dry. Wish I'd read all the recommendations for extras before baking. However, even if you follow the recipe to the letter, they taste pretty good, and you can say to yourself, "they definitely taste healthy!"
